No bake cookies are, quite simply, cookies that are made without any baking involved. Specifically, no bake cookies are made without the use of an oven.

Traditionally, no bake cookies [1] are made with stovetop heating. In traditional no bake cookies, you’d heat sugar, milk, butter and cocoa to create a sticky mixture for your cookies. Here’s one example of classic no bake cookies.

Then, you’d add oats, vanilla and peanut butter into that sticky mixture, thereby creating a cookie dough. You’d let them set, voila, no bake cookies! Here’s another example of no bake cookies.

  • Step 1: Whisk together peanut butter and maple syrup in a large bowl.

These peanut butter oatmeal cookies only require 3 ingredients: peanut butter, ripe bananas, and rolled oats.

You can also add extra add-ins as you wish, like chocolate chips or raisins.

  • 3 medium bananas
  • 4 tablespoon peanut butter
  • 150 g rolled oats

INSTRUCTIONS

Preheat the oven to 185°C/175°C fan oven/365°F.

Use a fork or spoon to spread the cookie dough into cookies on a baking sheet covered baking tray. The cookies will not change shape when they cook, so shape them the way you want them to turn out.

Bake the cookies for about 15-20 minutes, or until they are golden brown. The cookies will still be soft when removed from the oven.

Move the cookies from the baking tray to a cooling rack. Allow them to cool down completely, which will also help the cookies crisp up.

  • Preheat the oven to 185°C/175°C fan oven/365°F.
  • Mash the bananas in a bowl until smooth.
  • Add rolled oats and peanut butter, and stir to combine all the ingredients.
  • Add any add-ins if you wish.
  • Use a fork or spoon to spread the cookie dough into cookies on a baking sheet covered baking tray. The cookies will not change shape when they cook, so shape them the way you want them to turn out.

TOP TIPS

Here is how you can get these healthy cookies perfect:

  • Use ripe bananas, ideally they should be covered with brown spots. Unripe bananas will not taste as good, and can be hard to mash properly.
  • Add any add-ins you like. Try adding roughly chopped peanuts, chocolate chips, raisins, blueberries, chocolate spread or coconut flakes.
  • This recipe contains no sugar, as the ripe bananas add enough sweetness. If you wish, you can add some brown sugar or honey for extra sweetening.

These are no bake cookies which means you don’t need to bake them. But if you don’t like the texture of no bake cookies, you can actually bake these to make them more like traditional cookies. Baking these cookies will make them firm on the outside and chewy on the inside.

NOTES

  • Make sure to either use pitted dates or remove the pits from your dates before measuring them for the recipe.
  • If you are using an older package of dates or your dates seem dry rather than plump and moist, you will need to rehydrate the dates. To rehydrate them, soak them in warm water for 10-15 minutes. Then drain out the water and pat dry the dates. The dates are now ready to go in the food processor.
  • These are no bake cookies which means they don’t need baking. They will not have the same texture as baked cookies. See post for more details on the kind of texture to expect.
  • If you would like to bake these, preheat oven to 350F. Bake for about 10 minutes or until tops look dry. Cookies will not change in size during baking. Baking the cookies will produce cookies that are firm on the outside and chewy on the inside.
  • Rolled oats can be used instead of quick oats but I recommend you pulse them in the food processor a few times before using them. Whole oats will not soften as much in cookies so you will taste the chewy raw oats. Quick oats are small enough that they do soften so they don’t have as much texture.
  • The oats do not need to be cooked before using.
  • Natural peanut butter can be substituted with cashew butter, almond butter or sunflower seed butter. Just make sure they are all in their natural form (no added oils in the ingredient list).

PEANUT BUTTER ALTERNATIVES

As a die-hard peanut butter fan, I LOVED these breakfast cookies, as the peanut butter flavor was really evident.

However, I know many readers can’t tolerate peanut butter or aren’t a fan of it. You can substitute it with almond butter or even cashew butter.

To keep it nut-free, sunflower seed butter and smooth tahini can also used.
