Everything we didn’t do

  • Everything is mixed by hand, so you don’t need to pull out (and then clean) the stand mixer when you want cookies on a Tuesday.
  • We didn’t chill or “age” the dough overnight, because to quote Chris: “What a freaking bummer.” He tried a few, but none yielded the “best cookie in the world,” so we passed.
  • No flaky salt. “I put up one version with salt on top,” said Chris, “and Andy Baraghani looked me dead in the eye and said, ‘You know you can’t do that, right?’” That’s a chocolate cookie, he said, but it’s not our best, the paradigm: the Toll House cookie. Visually, the bougie salt starts to tell people, “Maybe you have a reason not to make this.”

Ingredients

cups (200 g) all-purpose flour (spooning into measuring cups, then leveling)

tsp. (4 g) Diamond Crystal or ¾ tsp. (4 g) Morton kosher salt

cup (1½ sticks; 169 g) unsalted butter, divided

cup (200 g) (packed) dark brown sugar

oz. (170 g) bittersweet chocolate (60%–70% cacao), coarsely chopped, or semisweet chocolate chips

Instructions on how to make BA’s best chocolate chip cookies!

Step 1:

Prepare the oven to 375 degrees Fahrenheit by positioning the racks in the top and bottom thirds of the space. In a small bowl, combine the flour, salt, and baking soda, and then put aside.

Step 2: 

Cook a half of cup of butter, which is 1 stick of butter (about 113 g of butter) in a large saucepan over medium heat until foaming and browning. This process should take approximately 4 minutes.

During this time, stir the pan often and scrape the bottom of the pan with a heat-resistant rubber spatula.

Place the butter in a big basin that can withstand heat and let it to cool for one minute. Brown butter should have little chunks of butter that have been cut from the remaining 1/4 cup of butter, which is a half stick of butter, approximately 56 g. The butter would probably start to melt but not foam and sizzle, so test with one piece before adding the rest ingredients into it.

Step 3: 

After the butter has melted, add both sugars and whisk the mixture, making sure to break up any clumps, until all of the sugar has been mixed and there are no more clumps.

Whisk in the egg and egg yolks until the sugar has dissolved and the liquid is smooth, which should take around 30 seconds.

Whisk in vanilla fold the reserved remaining ingredients into the butter mixture that we just have made. Then, use a rubber spatula to mix just until there are no dry spots left (which is also known as clums). Once the clums have left, then fold in the chocolate chips that we have prepared.

The dough will be soft till now. Next is the scoping process. However, it should hold its shape once scooped; if it slumps or oozes after being scooped, stir the dough back together several times, and let it rest for five to ten minutes until the scoops hold their shape as the flour hydrates).

Step 4: 

Make 16 balls of dough and distribute them between two rimmed baking sheets that have been prepared with parchment paper. Use a scoop that measures 1.5 ounces (3 tablespoons) to scoop the dough into small balls.

Cookies should be baked for 8–10 minutes, during which time they should get a deep golden brown color and become hard around the edges. Sheets should be rotated if the cookies are browning extremely unevenly; otherwise, they can be left alone. Allow to cool while still on baking sheets.

A cookie is always welcome in our house. But having to factor in long chill times for the most perfectly chewy cookie? Not as welcome. This No-Chill Chocolate Chip Cookie recipe is for those exact days where you just have no chill for, well, chilling your dough.

Baking is a science, and a tasty one at that. And don’t get me wrong, I totally get why you have to chill your dough. It’s all about keeping the fats (butter) from melting, which keeps your cookies consistently baked and uniform in their texture. Chilling also helps concentrate flavor and keeps your cookie size consistent.

Thanks to a few helpful tips and tricks, these No-Chill Chocolate Chip Cookies couldn’t be more quick and easy to whip up, sans a trip to the fridge. In fact, the dough can go straight from the mixing bowl to the oven to bake up into the delightfully chocolate chip-studded cookies of your dreams.

Ingredients

  • 1 cup unsalted butter, softened
  • 3/4 cup white sugar
  • 1 1/4 cups light brown sugar
  • 2 large eggs, cold
  • 2 1/2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1 1/2 cups chocolate chips or chunks (See Kelly’s Note)
  • Sea salt, for topping (optional)

Instructions 

  • Preheat the oven to 375°F. Line two baking sheets with parchment paper.
  • In the bowl of a stand mixer fitted with the paddle attachment, cream together the butter, white sugar and brown sugar until light and fluffy, about 2 minutes.
  • Add the eggs one at a time, beating between each addition, then beat in the vanilla extract.
  • Add the flour, baking soda, baking powder and salt and beat just until combined, then beat in the chocolate chips.
  • Scoop 2-tablespoon mounds of dough onto the baking sheets, spacing each mound at least 2 inches apart.
  • Bake the cookies for 9 to 12 minutes, rotating the pans halfway through, until they are slightly crispy around the edges and barely set in the centers. Remove the cookies from the oven and let them cool for 5 minutes on the baking sheets before transferring them to a rack to cool completely.

NOTES:

  • My go-to chocolate mix is a half semisweet chocolate chips and half dark chocolate chunks.
  • The key to chewy, softer cookies that taper into crispy edges is to underbake the cookies. Remove them from the oven when they are barely set in the centers then let them continue baking on the hot cookie sheets outside the oven for 5 to 7 minutes before transferring them to a rack to cool completely.

How to Store Chocolate Chip Cookies

Keeping cookies as soft and fresh tasting as possible is always my MO. If your cookies will be living on your counter top for a midnight snack, they can be stored in an airtight container at room temperature for up to three days (if they last that long!).

If you’ve made a larger batch that’s bound for the freezer to make Future You very happy, you’re in luck! The same is true with freezing your freshly baked cookies. An airtight container is also your friend in this case, and I like to freeze them in layers with a sheet of parchment paper in between. A quick bake at 325°F for 2 to 3 minutes will bring them right back to life.

Whether you freeze them or store them on the counter top, cooling your cookies completely is mandatory to keeping your cookies fresh, as you don’t want any steam (and thus condensation) to ruin the texture or flavor.
