INGREDIENTS

  • 5 boneless skinless chicken breasts trimmed of any fat
  • 1 cup panko bread crumbs (or gluten-free bread crumbs if desired)
  • ⅔ cup grated parmesan cheese
  • 3 tablespoons minced parsley
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • ¼ cup melted butter
  • 3 tablespoons fresh lemon juice
  • 2 garlic cloves, minced

INSTRUCTIONS

  1. Preheat oven to 350 degrees.
  2. Mix the bread crumbs, Parmesan cheese, parsley, salt, and pepper together in a shallow pie dish or a deep plate.
  3. Mix the butter, lemon juice and garlic together in another shallow pie dish or deep plate.
  4. Dip both sides of the chicken in the butter mixture – coating it well.
  5. Quickly, place the chicken on the bread crumb mixture and toss the crumbs up over the edges and top of chicken breast using either your hands or a spoon. Then gently press the chicken so the crumbs on the bottom side stick to the chicken. Now turn the chicken over and again press that side into the crumbs.
  6. Place chicken in 9×13 baking dish and repeat steps 3 and 4 with the rest of the chicken. Depending on the size of the chicken breasts you may need to use additional pans.
  7. When all chicken is prepped, bake for 40 minutes or until a meat thermometer reads 165 degrees when inserted in the thickest part of the chicken breast.

  • Season the chicken: First, preheat the oven to 400 degrees Fahrenheit and line a large sheetpan with parchment paper. Season the chicken cutlets with salt and pepper.
  • Prepare dipping station: In separate bowls, prepare the egg wash by beating the eggs in a shallow dish, add flour into a second plate, and then in a third plate, add the breadcrumbs and seasonings.
  • Coat the chicken: Add one chicken cutlet to a bowl of flour and coat the entire surface of the chicken. Next, dip the flour-coated chicken into the egg wash making sure to allow the excess eggs to drip off, then transfer the chicken to the breadcrumb mixture coating both sides. Repeat
  • Cook the chicken: Add one tablespoon of oil to a large nonstick pan over medium heat. Add two breaded chicken cutlets to the pan and cook for two minutes per side until both sides are a golden brown color.

Bake these boneless chicken breasts at 400°F for 17-20 minutes, or until golden on the outside and cooked through, yet still juicy on the inside.

A higher oven temperature creates a crust that crisps faster and keeps the meat juicy.

How To Reheat?

The crunchy topping is best when it is fresh out of the oven. When reheating, the oven is also the best method.

If frozen, transfer the chicken to the refrigerator to thaw the day before you want to reheat it.

Place the thawed chicken in a broiler safe baking dish or baking sheet.  Reheat in a 300°F oven until the chicken is warmed through (about 15 minutes).  Then, switch the oven to broil.  Broil the chicken until the topping is crisp.

Instructions

  • Heat the oven to 425°F. Line a baking sheet with parchment paper.
  • Combine the butter, olive oil, and garlic powder in a shallow bowl. Place in the microwave for 30 seconds, or until butter melts. Whisk with a fork until very smooth.
  • Combine the breadcrumbs, parmesan cheese, Italian seasoning, salt, and pepper in a second shallow bowl. Whisk until well combined.
  • Butterfly the chicken breasts. Place the chicken breast onto a cutting board. Using a large chef’s knife, slice the chicken in half horizontally through the center, and open up the breasts (like a book); slice all the way through to create two thinner chicken breast pieces.   • 6 Tablespoons Challenge Butter
  • ⅛ teaspoon red pepper
  • 2 large eggs
  • 2 Tablespoons Brown ‘n Spicy Mustard
  • ¾ cup bread crumbs or almond meal
  • 1 cup shredded Parmesan cheese
  • ¾ teaspoon Italian seasoning
  • 1-1½ lbs. boneless, skinless chicken tenders (about 12-16; Or 4 skinless, boneless chicken breast halves, butterflied)

DIRECTIONS

Preheat oven to 450°F.

Melt butter and combine with red pepper. Brush about 2 Tablespoon of the butter over a foil-lined 10X15-inch rimmed baking pan and set the remaining butter aside.

Whisk eggs and blend in mustard. Pour this egg mixture over the chicken tenders and stir to coat.

In a shallow bowl, combine breadcrumbs, cheese and Italian seasoning.

Remove the chicken tenders from the egg mixture and dredge them in the bread crumb/cheese mixture, thoroughly coating the pieces. Place the pieces on the prepared pan. Drizzle reserved butter mixture over the chicken tenders. Bake 15 to 20 minutes or until the chicken pieces are browned and thoroughly cooked.

How to prepare chicken tenders?

  • Preheat oven to 425°F. Lay chicken tenders on a sheet tray lined with foil for each cleanup.
  • Mix together the mayonnaise, spices, and cheese. Spread on top of the tenders evenly.
  • Sprinkle with the breadcrumbs.
  • Bake for 13-15 minutes, until the chicken tenders reach an internal temperature of 165°F and they are golden brown and bubbly.

Can I use chicken breasts if I don’t have chicken tenders?
