baked parmesan crusted chicken

This is such an easy recipe perfect for a weeknight dinner. The chicken is cheesy, moist and so delicious.

  • 5 boneless skinless chicken breasts trimmed of any fat
  • 1 cup panko bread crumbs (or gluten-free bread crumbs if desired)
  • ⅔ cup grated parmesan cheese
  • 3 tablespoons minced parsley
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • ¼ cup melted butter
  • 3 tablespoons fresh lemon juice
  • 2 garlic cloves, minced

  1. Preheat oven to 350 degrees.
  2. Mix the bread crumbs, Parmesan cheese, parsley, salt, and pepper together in a shallow pie dish or a deep plate.
  3. Mix the butter, lemon juice and garlic together in another shallow pie dish or deep plate.
  4. Dip both sides of the chicken in the butter mixture – coating it well.
  5. Quickly, place the chicken on the bread crumb mixture and toss the crumbs up over the edges and top of chicken breast using either your hands or a spoon. Then gently press the chicken so the crumbs on the bottom side stick to the chicken. Now turn the chicken over and again press that side into the crumbs.
  6. Place chicken in 9×13 baking dish and repeat steps 3 and 4 with the rest of the chicken. Depending on the size of the chicken breasts you may need to use additional pans.
  7. When all chicken is prepped, bake for 40 minutes or until a meat thermometer reads 165 degrees when inserted in the thickest part of the chicken breast.

This is a list that features the easy ingredients that are in this parmesan-crusted chicken! For a list of the full measurements, be sure to scroll down to the recipe card.

  • Chicken– Chicken cutlets are used because they are quick to cook and get tender as they cook. You can use other pieces of chicken like chicken breats, chicken thighs, or wings, but keep in mind the chicken may take longer to cook.
  • Salt and Pepper– A simple blend of salt and pepper gives this parmesan crusted baked chicken so much flavor!
  • Eggs– A simple eggwash is used to dip the chicken in before dipping into the breadcrumbs.
  • Flour– All purpose flour is used to make sure the breadcrumbs stick to the chicken to make sure it gets crispy. For gluten-free parmesan-crusted chicken, use gluten-free flour.
  • Panko Breadcrumbs– Gluten-free panko breadcrumbs are a great option for a crispy coating! Mixed with seasoning and parmesan, this breading is simply delicious.
  • Parmesan– Freshly grated parmesan has extra savory cheesy flavors and is the key ingredient in this gluten-free chicken recipe.
  • Seasoning– You will need Italian seasoning, parika, celery, salt, onion powder, and garlic powder to make sure the breadcrumb crust is filled with a ton of flavor.
  • Oil– Olive oil is a great vegetable oil to use to cook the chicken but feel free to use any other oil such as avocado, grapeseed, canola, etc.
  • Parsley and Lemon– Optional but highly recommended, fresh parsley and lemon juice allow pan-fried and oven-baked chicken parmesan to be extra bold in flavor.

  • Season the chicken: First, preheat the oven to 400 degrees Fahrenheit and line a large sheetpan with parchment paper. Season the chicken cutlets with salt and pepper.
  • Prepare dipping station: In separate bowls, prepare the egg wash by beating the eggs in a shallow dish, add flour into a second plate, and then in a third plate, add the breadcrumbs and seasonings.
  • Coat the chicken: Add one chicken cutlet to a bowl of flour and coat the entire surface of the chicken. Next, dip the flour-coated chicken into the egg wash making sure to allow the excess eggs to drip off, then transfer the chicken to the breadcrumb mixture coating both sides. Repeat
  • Cook the chicken: Add one tablespoon of oil to a large nonstick pan over medium heat. Add two breaded chicken cutlets to the pan and cook for two minutes per side until both sides are a golden brown color.
  • Bake: Repeat the steps of pan frying the chicken until all of the chicken has been seared. Place the chicken onto the sheetpan and bake the chicken for ten to twelve minutes until fully cooked through and no longer pink.
  • Serve: Garnish with fresh herbs and lemon juice. Enjoy!

What to Serve with Parmesan Crusted Chicken?

There are a million and one different ways to serve up your parmesan crusted chicken. Here, find a couple of ideas to inspire you…

  • Crispy Chicken Sandwiches: Sandwich the parmesan crusted chicken in between a brioche bun with fresh mozzarella, basil leaves, tomato slices, and a smear of pesto.
  • Crispy Chicken Salads: Top your favorite salad with a sliced up piece of the chicken. A spinach berry salad or homemade caesar salad are our favorites!
  • Crusted Chicken Entree: You can also serve the chicken as a main course alongside creamy mashed potatoes, asparagus with bacon, and cheesy bread.

How Long Does It Take to Cook Parmesan Crusted Chicken?

Because these chicken breasts have been halved and pounded thin, the cooking time is cut by more than half as my grandma’s original recipe suggested.

Bake these boneless chicken breasts at 400°F for 17-20 minutes, or until golden on the outside and cooked through, yet still juicy on the inside.

A higher oven temperature creates a crust that crisps faster and keeps the meat juicy.

How To Reheat?

The crunchy topping is best when it is fresh out of the oven. When reheating, the oven is also the best method.

If frozen, transfer the chicken to the refrigerator to thaw the day before you want to reheat it.

Place the thawed chicken in a broiler safe baking dish or baking sheet.  Reheat in a 300°F oven until the chicken is warmed through (about 15 minutes).  Then, switch the oven to broil.  Broil the chicken until the topping is crisp.

  • Butterfly the chicken breasts. Place the chicken breast onto a cutting board. Using a large chef’s knife, slice the chicken in half horizontally through the center, and open up the breasts (like a book); slice all the way through to create two thinner chicken breast pieces. See notes for a photo tutorial link.
  • Dredge one piece of chicken through the butter mixture, then transfer to the parmesan mixture. Press to adhere the coating, then flip the chicken to coat the other side. Transfer to the prepared baking sheet, and repeat with the remaining chicken.
  • Transfer the baking sheet to the oven. Bake 20 minutes, flipping the chicken pieces once halfway through. Check the temperature using an instant read thermometer and ensure the internal temperature is at least 165°F.
  • Garnish with fresh chopped parsley or basil if desired and serve immediately.

 baked parmesan crusted chicken tenders

Baked chicken tenders with parmesan cheese and a touch of Italian seasoning are a healthier and non-traditional alternative to frozen or fast food versions. Try dipping these in your favorite marinara sauce for an extra Italian flare.

  • 6 Tablespoons Challenge Butter
  • ⅛ teaspoon red pepper
  • 2 large eggs
  • 2 Tablespoons Brown ‘n Spicy Mustard
  • ¾ cup bread crumbs or almond meal
  • 1 cup shredded Parmesan cheese
  • ¾ teaspoon Italian seasoning
  • 1-1½ lbs. boneless, skinless chicken tenders (about 12-16; Or 4 skinless, boneless chicken breast halves, butterflied)

Preheat oven to 450°F.

Melt butter and combine with red pepper. Brush about 2 Tablespoon of the butter over a foil-lined 10X15-inch rimmed baking pan and set the remaining butter aside.

Whisk eggs and blend in mustard. Pour this egg mixture over the chicken tenders and stir to coat.

In a shallow bowl, combine breadcrumbs, cheese and Italian seasoning.

Remove the chicken tenders from the egg mixture and dredge them in the bread crumb/cheese mixture, thoroughly coating the pieces. Place the pieces on the prepared pan. Drizzle reserved butter mixture over the chicken tenders. Bake 15 to 20 minutes or until the chicken pieces are browned and thoroughly cooked.

  • That’s it – you can’t get any easier!

Can I use chicken breasts if I don’t have chicken tenders?

Yes, just cut the boneless skinless chicken breasts against the grain into 1-inch strips.

Make the rest of the recipe per the directions! I’ve made them both with chicken breast strips or chicken tenders and both versions come out perfectly every time.
