Best Homemade Hamburger Patty Recipe

Best Hamburger Patty Recipe – Thick or thin, made on the grill or stovetop, this is the best and easiest all-purpose recipe for perfect hamburger patties every time!

Ingredients

  • 2 pounds ground chuck
  • ½ cup crushed saltine crackers or Panko breadcrumbs
  • 1 large egg
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons milk
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper

Instructions

  • Set out a large mixing bowl. Add in the ground beef, crushed crackers, egg, Worcestershire sauce, milk, salt, garlic powder, onion powder, and pepper. Mix by hand until the meat mixture is smooth, but stop once the mixture looks even. (Overmixing can create a dense heavy texture.)
  • Press the meat down in the bowl, into an even disk. Use a knife to cut and divide the hamburger patty mixture into 6 – 1/3 pound grill or skillet patties, or 12 thin griddle patties.
  • Set out a baking sheet, lined with wax paper or foil, to hold the patties. One at a time, gather the patty mix and press firmly into patties. Shape them just slightly larger than the buns you plan to use, to account for shrinkage during cooking. Set the patties on the baking sheet. Use a spoon to press a dent in the center of each patty so they don’t puff up as they cook. If you need to stack the patties separate them with a sheet of wax paper.
  • Preheat the grill or a skillet to medium heat. (Approximately 350-400 degrees F.)
  • For thick patties: Grill or fry the patties for 3-4 minutes per side.
  • For thin patties: Cook on the griddle for 2 minutes per side.
  • Stack the hot patties on hamburgers buns, and top with your favorite hamburgers toppings. Serve warm.

Serve on bun, or in lettuce wrap for a low carb option. Top as desired and enjoy!

Are baked hamburgers good?

They are. The only issue is that the meat does tend to come out a bit drier compared to frying or grilling since some juices are lost while baking. So they are not as good as, say, broiled burgers.

Still, these burgers are delicious, and my family requests them often. I would say their main advantage is that they are very easy to make.

How long do I cook beef burgers in the oven?

While this baked hamburgers recipe calls for 20 minutes total cooking time, there are other signs your burger is ready. When the cooking juices loose their red color and the patties feel firm when pressed with the back of a spatula, they’re likely ready. But the most important sign they are done is the temperature test. Use an instant read meat thermometer to make sure the internal temp is at least 160°.

What are the best toppings for burgers?

From cheese, lettuce, and tomato to mayo, ketchup, spicy mustard, bacon and even eggs, there is no limit to what toppings you can put on a burger! For inspiration, check out these burger toppings. If you’re thinking about when you should add cheese slices to your baked burgers, here’s a tip: Add cheese slices 1 to 2 minutes before the end of baking time. The cheese should be melted, but should not entirely lose its shape and slide off.

TIPS HOW TO MAKE THE BEST BURGER

  • Correct Pan:  Use a cast iron skillet or heavy bottom pan because they distribute heat more evenly and therefore cook your hamburgers more evenly.
  • Hot: Get the pan very hot before adding the burgers to create a nice crust/char for maximum flavor and juiciness.
  • Season:  Seasoning the burgers with just salt and pepper or seasoning just the surface of the hamburger patties will leave you with boring, bland burgers.  In this Best Burgers recipe, the beef is seasoned throughout with shallots, garlic, Worcestershire sauce, oregano, smoked paprika, cumin, salt and pepper to create a dynamic, well rounded flavor profile.
  • Don’t Overwork:  Stop mixing the ingredients as soon as they are combined.  Overworking the meat will create rubbery, tough burgers. Shape the hamburger patties gently and don’t pack the meat together or else you’ll end up with a hard burger.
Make an Indent:  Making a shallow indentation in the center of each patty will ensure the burgers cook evenly and prevent the centers from bulging as the surrounding collagen tightens.
  • Don’t Press:  We’ve all seen it done, but don’t EVER press down on your burgers with your spatula. Pressing down on the burgers squeezes out the flavorful juices just like a sponge.  Every time you press, you loose flavor and moisture resulting in a drier burger.
  • Let Burgers Rest:. Once the burgers are done, place them on a plate and let them rest for 5 minutes.  This allows the juices that have been pushed to the outside of the burger when cooking to be redistributed throughout the burger.

Recipe Variations

  • You also can make these burgers with ground turkey or chicken thighs, but keep in mind the safe minimum internal temperature for ground poultry is 165 F.
  • Instead of hamburger buns, try English muffins, focaccia, rye bread, sourdough bread, ciabatta, pita, or your favorite base to build a spectacular burger.
  • Add Mexican flair by spicing the burgers with 1 teaspoon of taco seasoning or a Cajun or Creole blend and reducing the salt to 1/2 teaspoon.
  • Replace the American cheese with pepper jack, mozzarella cheese, or blue cheese.
  • Instead of adding cheese after the burgers have finished cooking, place the cheese on top when they are a couple of degrees shy of 160 F, and return them to the oven until the cheese is melted (about 1 minute).
