Ingredients

  • 1 pound ground chuck 80%-85% lean
  • kosher or sea salt to taste
  • freshly ground black pepper to taste
  • 4 slices American or Cheddar Cheese
  • 4 Burger Buns

  • condiments of choice such as ketchup, mustard, and mayo. Toppings such as lettuce, tomato, red onion, and pickles.

Instructions

  • Place ground chuck in a medium-size mixing bowl and sprinkle with salt & pepper. Mix gently to combine, but don’t overwork the meat.
  • Divide the meat into four equal portions.
  • Place one portion on a plate and gently press it into a 1-inch, round patty. (The patty should NOT be smooth – leave some craggy edges and don’t press it too flat.)
  • With your thumb or fingers, press a “moat”, approximately ¼-½ inch from the edge, around the circumference of the burger – be sure the edge of the burger is a little higher than the indentation. This will ensure the burger will flatten out while cooking. Repeat this process with each portion.
  • Heat a large skillet over medium/high heat. When the pan is hot, carefully place the patties in the skillet (no need to grease skillet) leaving some space between each patty.
  • Cook the burgers until nicely seared and they have browned halfway up the sides.
  • Flip the burgers and cook to your liking. (*NOTE – To ensure all bacteria has been killed, the FDA recommends cooking burgers to an internal temperature of 160°F.)
  • If adding cheese: remove the pan from the heat and place the cheese atop the burgers. Cover the skillet and allow the residual heat/steam to melt the cheese.
  • Serve on toasted buns topped with your favorite toppings.

For this demonstration, each burger patty weighs about 8 ounces, patted out to about 3/4-to-an-inch thick, which makes for a nice big-sized hamburger. Before hitting the skillet, salt and pepper both sides of the burgers generously.

Next, grease a skillet lightly with oil. Use your favorite skillet. I’ll use either a nonstick or a cast iron skillet.

Preheat the pan on medium high. Add the patties to a hot skillet. If you’re not sure that your skillet is hot enough, just touch a burger patty to the pan; if it sizzles, the pan is ready. If it doesn’t sizzle, wait a minute or two, and try again.

When the pan is hot enough, add your patties, and then turn the heat down to medium.

To achieve perfect doneness, we’re not going to rely so much on cooking time as on look. What you are looking for is a change in color as the heat works its way up the side of the patties; the raw burger is going to start turning opaque and then gray or light tan. This is going to take about 5 to 6 minutes for the line of tan/gray to extend just a little past halfway up the burger. When your patty is not quite two-thirds tan, give it a flip. You’ll cook the second side for a little less time than the first side. My rule of thumb is however long it took the first side, subtract about a minute for the time you’ll cook the second side. So if the first side cooked for five minutes before flipping, the second side will go for about four minutes.

The burger is done when the meat is somewhat firm to the touch, springing back after you gently press the center with tongs or your finger. Juice will also want to pop up through the light crust. If when you push down, you feel there’s no resistance there, give it a little more time to firm up.

When done, remove the patties from the skillet and let them rest for at least five minutes, while you prep your buns with your favorite toppings. Incidentally, this method works just as well on the grill. Enjoy!

  1. Add cooking oil to a frying pan. Turn stove to medium heat and allow the pan to warm up.
  2. Place the frozen hamburgers into the hot pan.
  3. Total cook time is about 15 minutes. Cook each frozen patty for about 3-5 minutes, then flip. Continue to flip every few minutes so both sides are evenly browned, have a nice crust and the internal temperature reach 160 degrees Fahrenheit.
  4. If desired, add cheese during the last minute of cook time.
  5. Remove the burgers from the pan and place on a paper towel to absorb excess grease.

Are frozen hamburgers as good as fresh?

Taste wise you most likely will never know the difference. The biggest difference between the two is fresh spoils rather quickly and the other will last for months safely in your freezer. Whether defrosted or cooked from frozen like we explain here you can get tender protein either way.

There is detailed instructions provided below in the printable recipe card. I want to quickly explain how simple this is to make here though first.

Once you do this you may never worry about dinnertime again. We’re all forgetful at times and cooking meat from frozen has been a game changer for me.

  • First preheat oven to 420 degrees. Wrap the top of your baking sheet with aluminum foil. Lay a wire rack on top. Place as many frozen turkey or beef patty burgers on top without overlapping.
  • Sprinkle frozen burger patties with salt and pepper. Bake on middle oven rack for about 15 minutes (timing will vary with thickness and how well done you want them).
    • Open oven and flip each one over on to the other side.
  • Continue baking frozen hamburger patties for 10 minutes cooking time. Use meat thermometer to see if they’ve reached 160 in the center.
  • If you want to add cheese add 1 slice on each now and bake for 1 minute to melt. Remove, season again and serve on buns.

Stovetop burgers are a quick weeknight meal — very quick. Even if you prefer your burgers well-done, burgers will be ready in 10 minutes tops. Cook any longer and that’s when you wind up with dry, crumbly hockey pucks, no matter how diligently you followed the advice given above.

It’s a little nerdy, but I usually set a timer so I don’t accidentally get caught up in conversation or another part of the meal and forget about the burgers.

You can also keep an eye on the sides of the burgers — when you see just a bit of pinkish-red in the very middle, medium-rare burgers are ready; the second that pinkish line disappears, your burgers are medium.

Ingredients

  • 1lb pack of frozen Burger Patties
  • Oil
  • Salt & pepper

Instructions

  1. Remove your frozen burger patties from the plastic packaging.
  2. Using a metal spatula, split the patties apart from each other.
  3. Add oil to a cast-iron pan set to medium-high.
  4. Season each side with salt and pepper. Note: allowing just a couple of minutes to thaw will help the seasonings stick.
  5. Place frozen, seasoned patties onto the hot cast-iron pan.
  6. Cook 3-5 minutes on each side, then flip.
  7. Continue flipping until a nice crust has formed — about 15 minutes.
  8. Remove from the pan and serve on your favorite bun!
