A Little Pink Is OK: USDA Revises Cooking Temperature For Pork : The Two-Way The U.S. Department of Agriculture lowered the recommended cooking temperature of pork to 145 degrees Fahrenheit. That, it says, may leave some pork looking pink, but the meat is still safe to eat.
The safe internal pork cooking temperature for fresh cuts is 145° F. To check doneness properly, use a digital cooking thermometer. Fresh cut muscle meats such as pork chops, pork roasts, pork loin, and tenderloin should measure 145° F, ensuring the maximum amount of flavor.
Overcooked Pork Chops Are Tough
When they’re cooked for even a few minutes too long, whether it’s in the oven or on the stovetop or grill, they’re quick to dry out, and — you guessed it — become tough, chewy, and less than appealing. This is partly due to carry-over cooking.
Undercooked pork carries the risk of food-borne illness, and overcooked pork can be dried-out, tough, and chewy. Cook your chop until it’s around 135 degrees, and then transfer it to a cutting board—the residual heat will bring it to the USDA’s recommended 145 degrees.
Drizzle the pan liquid over your pork chops. Cover and simmer, continuing to spoon the liquid on the chops occasionally for 45 minutes or until the meat is tender.
For example, boneless pork chops about 1-inch thick will need a 2 to 3 minute sear in the skillet and then 8 to 15 minutes of bake time in the oven. Thinner chops will cook much quicker, and thicker (or bone-in) chops may take a few minutes longer — a temperature thermometer is your best bet for checking doneness.
Some of my favorite herbs, spices, and seasonings to use as a pork chop seasoning are cumin, garlic, paprika, and chili powder. Some others that go well with pork are sage, rosemary, cayenne, thyme, and coriander. Brown sugar and clove are a great way to add in some sweetness.
Pan-searing the chops before baking creates texture and flavor for a perfectly cooked, tender, juicy pork chop every time. And the flavor of the fresh lemon, garlic, oregano, and thyme are the perfect complements to the pork, which is somewhat bland on its own.
For chops, we like to get our pan screaming hot…then take it down to medium. That first blast of heat helps get a good golden crust. But, if you keep it that high, the chop won’t cook evenly through the middle. Medium heat helps keep the outer edges of the meat tender while the center reaches the perfect temperature.
You can also use a meat tenderizer or any acidic fruit juices like lime, lemon, or pineapple juice. The acid penetrates the meat and breaks down the protein which tenderizes the pork chops. How long should I marinate pork chops? For ½ inch thick pork chops, I recommend a minimum of 45 minutes to overnight.
Salt will help your meat retain moisture. You can add salt directly, or use a salty liquid like soy sauce or Worcestershire sauce. And aromatics like garlic, shallots, herbs, and spices will impart flavor. When your marinade is ready, place your pork chops in a zipper bag and pour the marinade over top.
Pork chops can marinate in a milk-based marinade for several hours or even overnight. A minimum of one to two hours is recommended. Use enough milk to completely cover the pork chops in whatever container you place them in, but they don’t have to be swimming in it.
Apple Cider Vinegar – acid in the vinegar helps to “break down” proteins, making the meat extra tender. You can substitute white vinegar, rice vinegar, or use pineapple juice for a Hawaiian style marinade.
To rehydrate dry pork chops, try heating them in a bit of chicken stock. You can also try to bump up the moisture by smothering the meat in your favorite barbecue sauce, or give the pork a second chance at life by adding it to a soup, stew, or casserole.
Method 1 (Without Meat Thermometer): Press your tongs into the center of the meat to check, if it is firm but not hard, it is done. If it is still soft, it needs more time and if the pork chop is hard that means it is overcooked.
Raw meat can carry bacteria which cause food poisoning and, accordingly, eating undercooked pork or chicken may result in food poisoning. If you experience symptoms such as stomach pain, diarrhea, and fever after eating undercooked meat, seek a diagnosis from a medical institution immediately.
Steaks, pork chops, and other whole-muscle meats are the safest bet. That’s because the cooking process can easily kill off bacteria on the cut’s surface, while the inside of the meat is essentially sterile, protected from any potential pathogens—in theory.
