This recipe combines the perfectly seasoned chicken with cream cheese and just the right amount of buffalo sauce for perfectly delicious shredded buffalo chicken.  Not only is this recipe incredibly tasty, but it is also low carb, gluten free and easily used for meal prep.

We are huge buffalo chicken lovers in our house.  I didn’t grow up eating it but, my husband introduced me to the deliciousness that is buffalo sauce early in our relationship and since then, we have been creating many variations of meals with it, but this Crock Pot Buffalo Chicken is one of our favorites!

What is Buffalo Chicken?

Buffalo chicken actually has kind of a fun origin.  It originates from Buffalo, NY where in 1964, a college aged son came home late with some buddies and asked his mom to make them a snack. Fortunately for him, his mom owned a local bar and eatery, the Anchor Bar so she knew her way around packs of hungry guys.

She thew together chicken wings with a sauce she created with a combo of cayenne pepper sauce  and butter.  These became a staple for the bar, and soon a staple of every bar around the nation.

It is true that originally buffalo chicken really referred to wings, but since then, many variations have popped up and I happen to think that this slow cooker version is one of the tastiest! You get all of the delicious taste, combined with tender chicken and no bones!

With all this talk of cayenne pepper sauce you may be wondering just how spicy Buffalo Chicken is.

Buffalo Chicken ranges from mildly spicy to very hot depending on how much buffalo sauce you choose to use.  Since this recipe has cream cheese in it, this helps to neutralize some of the kick and really brings out the delicious flavor that can be otherwise hidden by the heat. You can choose to use more or less buffalo sauce to make the dish more or less spicy.

After 4-6 hours you will have tender, juicy, spicy chicken and shreds easily.

Ingredients

  • 2-3 pounds Chicken Thighs or Breasts
  • 2-3 cups of Franks Buffalo Sauce or similar
  • 1 packet dry Ranch Dressing Mix

Instructions

  1. Pour the hot sauce and the ranch dressing into the crock pot. Whisk together.
  2. Add the chicken and submerge it in the buffalo sauce.
  3. Cook on low for 4-6 hours.
  4. Transfer the chicken to a large bowl and shred it using two forks. This will be very easy because the chicken will be very tender. Once the chicken is shredded, stir in extra buffalo sauce from the crock pot until the chicken reaches your desired level of spiciness.

Recipe Notes

Before we get to the recipe, I wanted to explain the difference between Frank’s Red Hot and Frank’s Buffalo Sauce. Red Hot is a hot sauce. Buffalo sauce is made with hot sauce, but has additional ingredients and is not as spicy. You want to use buffalo sauce for this recipe, not Red Hot.

Crockpot Buffalo Chicken and Rice

This easy recipe for crock pot buffalo chicken and rice uses the flavors of spicy chicken wings in a flavorful, one-dish recipe. And it’s made in the slow cooker, so you can enjoy doing other things while your dinner cooks.

If you like your food spicy, you can increase the amount of hot sauce used in this recipe. Or you can add things like minced jalapeño or habanero peppers, or sprinkle some crushed red pepper flakes into the slow cooker.

You can make this recipe with boneless, skinless chicken thighs instead of chicken breasts if you’d like. In that case, increase the cooking time to six to seven hours. Always test chicken before you eat it to make sure it is thoroughly cooked. It should be 160 F every time.

Brown rice is used in this recipe because it cooks better in the slow cooker. This type of rice has the bran attached, which means it absorbs water more slowly than white rice.

Steps to Make It

  1. Spray a 4 to 5 quart slow cooker with nonstick cooking spray.

  2. In the prepared crock pot, place the chicken breasts. Top the chicken with onion, rice, and celery.

  3. In a large bowl, combine the soup, hot sauce, and chicken broth and mix well. Pour into crock pot and stir to combine.

  4. Cover crock pot and cook on low for 5 to 6 hours or until chicken is tender and rice is al dente. Sprinkle with blue cheese and serve.
