  • 1 can (284 mL)  CAMPBELL’S® Condensed Cream of Mushroom Soup
  • 1 cup water
  • 3/4 cup uncooked regular long grain white rice
  • 1/2 tsp onion powder
  • 1/4 tsp ground black pepper
  • 2 cups frozen vegetable
  • 4 skinless, boneless chicken breast halves
  • 1 cup shredded Cheddar cheese

TIPS

Italian: In place of onion powder, use 1 teaspoon Italian seasoning. Substitute 1/3 cup shredded Parmesan for Cheddar.

Mexican: In place of onion powder, use 1 teaspoon chili powder. Substitute Mexican cheese blend for Cheddar.

What Is Campbells Chicken And Rice Casserole?

As a way to use Campbell’s condensed cream of chicken soup, the company introduced this homestyle casserole. There’s no doubt that the cheesy chicken and rice casseroles served at potlucks and delivered to friends in need all relied on this can of soup.

We are all housebound now, so there’s no better time than now to make your own condensed soup from scratch (no shame to the canned stuff!) The homemade version is made with just a few pantry staples – flour, broth, and milk – and I promise you won’t miss any of the classic creamy chicken flavors.

How To Make Campbells Chicken And Rice Casserole?

  1. Preheat the oven to 350F.
  2. Mix together the cream of chicken soup, cubed chicken breast, rice, chicken broth, and sour cream in a large bowl until everything is incorporated. Spread the mixture into a 9×13 baking dish.
  3. Put the Ritz crackers in a zip-top bag and roll them with a rolling pin. Then, reclose the bag and shake until the cracker crumbs are evenly coated in butter.
  4. Place the cracker mixture over the casserole and bake for 40 minutes, or until the crackers are golden and the rice is tender. Enjoy

Recipe Variations

These little tips will do the trick if you’re as crazy about this recipe as we are and want to add a bit of variety!

  • Campbells Chicken Rice Broccoli Casserole – Add 2 cups of small broccoli florets to the rice mixture and continue with the recipe as directed. Fresh broccoli or thawed frozen broccoli can be used.
  • Cheesy Campbells Chicken and Rice Casserole –Rather than top the casserole with Ritz crackers, top it with shredded Colby jack cheese. The rice mixture can also be topped with additional cheese if you like it extra cheesy!
  • Creamy Campbells Chicken Mushroom Rice Casserole – As an alternative to one large can of Campbell’s Cream of chicken, use one regular-sized can of cream of chicken and one regular-sized can of Campbell’s cream of mushroom soup. In addition, I like to add about one cup of diced fresh mushrooms to the rice mixture as well. Proceed with the recipe and cook as directed

Recipe Tips

  • Use Quick Cooking Rice –I mentioned it above, but it is worth repeating since I get the question so often. This recipe is for quick-cooking rice. Minute brand or store brand is fine, but it must be quick cooking. In order to get good results with another variety of rice, you may need to adjust both the liquid amount and cooking time.
  • White OR Brown rice– This chicken and rice recipe works with any kind of quick-cooking rice, so you can use white or brown rice according to your preference.
  • Rice should be added uncooked! Do not cook the rice before adding it to the casserole. It will bake up tender and fluffy.
  • Ritz Cracker topping – My family’s favorite part of the casserole is the topping! It is buttery, crispy, and absolutely delicious! To make it easy and mess-free, I put the crackers in a zip-top bag, then crush them with a rolling pin and add the butter right into the bag. You can then just add them to the casserole.
  • Make-ahead –To have it ready to bake as soon as you get home, prepare the chicken and rice part of the casserole up to 24 hours in advance and store it in the fridge. Top it with the crumb topping before baking.
  • Freezer Meal – You can also prepare this chicken and rice casserole as a freezer meal.

Use Condensed Soup if you can get it

So for the original photos of this post, I used a different manufacturer’s can of cream of chicken soup for these pictures. You can tell the older photos as I pre-fried the chicken, garlic and shallots as described in the optional step in the recipe.

From the newer photos, you can see the difference in the appearance of the casserole if you do not follow the optional step.

You could of course also try a condensed cream of mushroom soup if you wanted some variation – that also works.

However, the soup I used originally was not a ‘condensed’ soup, so the sauce is slightly different and less thick than usual. So if you use a non-condensed can of soup, you may want to thicken the sauce using some cornflour as mentioned in the recipe.

So my recommendation is, if you can get your hands on some Campbell’s or Erin’s condensed cream of chicken soup, please do use that. It is just better, and will give you a thicker and tastier sauce in your casserole! Their soups really are the best!

If you’re new to slow cooking it really is a game changer. Yes I do make a lot of Instant Pot recipes too and they’re so quick. Sometimes though I’m ready to go old school and not worry about longer cooking times.

When it comes to larger cuts of meat I do kinda’ prefer slow cooker recipes anyway. Low and slow is the way to go to get meat really tender.

Stir The Soup, Water, Rice, Vegetables And Onion Powder In A 12″ X 8″ Shallow Baking Dish.

Bake At 375 Degrees For 45 Minute Or Until Done. Top With Cheese.

Serve With A Green Salad And Bread Of Your Choice

Make the sauce:

Add 1/4 cup dry sherry or dry white wine to the pan to deglaze it, scraping off the browned bits from the bottom.

(At this point, if you are making ahead, reduce the sherry to 1 tablespoon and pour off into the casserole dish. Refrigerate cooked onions, garlic, mushrooms, and browned chicken pieces until you are ready to make the casserole.)

Let the sherry reduce to about 1 tablespoon, then add the chicken stock, and remove from heat. Stir in 1 1/2 teaspoons salt, the cream, and the sour cream
