Origins

The origin of tortellini is disputed; both Bologna and Modena, cities in Italy’s Emilia-Romagna region, claim to be its birthplace. OxfordDictionaries.com traces the etymology of tortellini to the diminutive form of tortello, itself a diminutive of torta (“cake” or “pie” in Italian). 

The recipe for a dish called “torteletti” appears in 1570 from Bartolomeo Scappi. Vincenzo Tanara’s writings in the mid-17th century may be responsible for the pasta’s renaming to tortellini. In the 1800s, legends sprang up to explain the recipe’s origins, offering a compromise. Castelfranco Emilia, located between Bologna and Modena,  is featured in one legend, in which Venus stays at an inn. Overcome by her beauty, the innkeeper spies on her through a keyhole, through which he can only see her navel. He is inspired to create a pasta in this shape. This legend would be at the origin of the term “ombelico di Venere” (Venus’ navel), occasionally used to describe tortellini.  In honor of this legend, an annual festival is held in Castelfranco Emilia. Another legend posits that the shape comes from Modena’s architecture, which resembles a turtle.

Place in the freezer, laying flat for up to one month. When ready to thaw, simply place in the refrigerator over night until it is thawed.
  • How to warm up Chicken Tortellini Soup: When ready to warm up, place back into the slow cooker or a large pot over the stovetop. Warm up slowly, stirring occasionally. Once the Chicken Tortellini Soup is warmed up, add in the tortellini pasta. Cook until tender and everything is warmed through.

For the chicken, you can use boneless chicken breasts or even rotisserie chicken. To keep this soup even easier I used rotisserie chicken, but I will also include the directions on how to use chicken breasts in the recipe. It’s still incredibly easy but it does require a little more time. For the tortellini, my store usually carries tortellini in the deli section, but I couldn’t find it, so I used frozen tortellini. Slow Cooker Creamy Tortellini, Spinach And Chicken Soup

You guys, this is a soup that you absolutely have to try.  It is so super good.  For reals!  You are going to love it.  It’s like a creamy tomato soup with cheesy tortellini and chicken and then a pop of color from the bright green spinach.

My kids both died over this soup and we were all sad when there was none left.  It has loads of flavor and comfort.  No need to make a roux on the stove top at the end of cooking time, the flour is added at the beginning to give the soup a creamy, thick consistency without dirtying extra pans.

What Slow Cooker Did You Use?
