Ingredients

You’ll just need a handful of ingredients to make this tasty stir fried rice recipe – most of which you’ve probably got in the cupboard or freezer at home already!

  • 1 tbs sunflower oil – you could also use rapeseed oil if you prefer.
  • 1 clove garlic – finely chopped (or use a 1/2 tsp garlic powder)
  • 1 large onion – just a regular brown onion is fine for this recipe just finely chopped – you could use a bunch of sliced spring onions if you prefer.
  • 1 cup rice – I tend to just use basmati rice for this recipe but feel free to use whatever rice you prefer. Or when I’m really pushed for time or feeling lazy then I use a couple of bags of microwave egg fried rice instead.
  • 1 cup frozen peas – you can use just peas or the the frozen peas and sweetcorn mixture.
  • 2 large eggs – beaten
  • Soy sauce to taste

What Other Ingredients Can I Add To Beef Fried Rice?

  • sweetcorn – just use the frozen peas and sweetcorn mixture or add in a can of sweetcorn.
  • diced peppers – dice up red and green peppers and stir fry them before adding the rice.
  • baby corn – you can use fresh baby corn or canned.
  • sliced spring onions – you can use these in place of the brown onion or sprinkle sliced onions over your finished fried rice.
  • diced courgettes – stir fry diced courgettes before you add the rice.
  • chopped spinach – stir fresh chopped spinach into the rice to wilt it in the heat.
  • grated carrots – bulk up the recipe with a grated carrot – just stir fry before adding the rice.

Quick and easy way to use up your leftover roast beef with this budget friendly Chinese style fried rice

Ingredients

  • 1 tbs sunflower oil
  • 1 clove garlic – finely chopped
  • 1 large onion – finely chopped
  • Handful of shredded leftover roast beef
  • 1 cup rice
  • 1 cup frozen peas
  • 2 large eggs – beaten
  • soy sauce to taste

Instructions

  1. Cook the rice as per the packet instructions – this usually takes around 10 minutes
  2. Whilst the rice is cooking add a splash of oil into a wok or large frying pan
  3. Tip the garlic, onions and shredded beef into the wok and cook over a medium heat – stirring often so it doesn’t stick – make sure the beef is thoroughly reheated and piping hot throughout.
  4. Cook the peas in the microwave as per the packet instructions – drain and put to one side
  5. Once the rice is cooked – drain
  6. Add another splash of oi to the wok and tip in the cooked rice and peas – stir fry briskly over a high heat
  7. Add the eggs and stir into the hot rice mixture until they’re cooked through.
  8. Season the rice with soy sauce to your own taste.

How Much Beef Do You Need to Make Leftover Roast Beef Fried Rice?

As much as you’ve got left.

Fried Rice with Leftover Beef is great because you really can use what you’ve got.

300g of beef is ideal to serve 4. But, if you’ve got less, add more vegetables or rice. You could even cook up some other meats, like a chicken breast or two and call it special fried rice!

Can You Make Fried Rice with Leftover Veg?

Yes, I use leftover vegetables in my leftover roast beef fried rice. This isn’t essential, but you can use whatever you might have left.

What Veg Should You Add to Fried Rice?

I always try to add frozen peas and corn and some spring onions to my Chinese Beef Fried Rice. These have a great flavour and texture but also add colour.

Then, leftover veggies.

I’ll typically have carrots left, but maybe also things like cabbage, sprouts and broccoli.

You can add your leftover veggies with your corn and peas, unless they are super soft, or you want to keep them from becoming too soft, then I’d just stir them through at the end with the spring onions, just to warm them up.

How Do You Add Egg to Fried Rice?

I’ve got a recipe for Pork Fried Rice, in which I whisk the eggs together in a jug and scramble them in a pan, before setting to one side and returning to the rice later.

You can absolutely do this if you prefer, but recently I’ve started just cracking the eggs onto the rice, meat and veg, and stirring through. It means the recipe follows a slightly different order, but ends up tasting the same.

Kind of scrambling them in with the rice and veg.

I just crack the eggs on, and then constantly more the rice so that the eggs cook and move about into the meal.

HOW TO MAKE LEFTOVER ROAST BEEF AND WILD RICE SOUP

This soup couldn’t be easier to make. Simple soften the vegetables. Then add the mushrooms, garlic and beef. Next add the stock, then the rice. Add a lid and let it simmer away while you get on with your evening. When the rice is cooked, finish with the cream and serve.

WHAT IS THE DIFFERENCE BETWEEN A SIMMER AND A BOIL AND WHY DOES IT MATTER?

This soup should simmer and not boil. Simmering liquid has slow, gentle, very small bubbles. Boiling liquid has rolling, steady, more forceful bubbles. The reason you should always simmer soups and stews is that they require gentle cooking for longer periods. Boiling liquid will make the meat fibers tough. Simmering allows the meat to tenderize while cooking.

TIPS FOR MAKING THE BEST LEFTOVER ROAST BEEF AND WILD RICE SOUP

  • If I’m in a real hurry I used ready chopped soup vegetables here. I’m lucky enough to have Trader Joe’s near me and their Mirapoix mix is great in soups. But loads of other stores have a similar chopped onion, carrot and celery mix. Or you can buy the ready chopped onions and add carrots and celery.
  • Make sure the rice is well rinsed before you add it. This should stop your soup from going ‘gummy’.
  • Always make sure to trim the beef really well when cutting it so you don’t get any less than perfect bits of meat in your soup.
  • This soup, like all broths, needs to be really well seasoned. Keep tasting it as you go along. Commercially prepared stock can be quite salty – so don’t add more until you know it needs more.

CHINESE FRIED BEEF AND RICE

INGREDIENTS

  • 2
    eggs, beaten
  • 2
    tablespoons cooking oil or 2 tablespoons butter
  • 1
    garlic cloves, minced or 1/8 teaspoon garlic powder
  • 1
    cup any vegetables
  • 14
    cup onion, chopped
  • 1
    cup cooked beef, chopped
  • 2
    cups cold cooked rice
  • 2
    tablespoons soy sauce

DIRECTIONS

  • Scramble eggs. Set aside.
  • In large frying pan, heat 2 tablespoons oil on medium high heat.
  • Add garlic to heated oil and stir.
  • Add vegetables, onion and beef.
  • Mix until blended and cook, stirring constantly, 2-3 minutes.
  • Add rice and cook, stirring constantly until rice is hot.
  • Stir in soy sauce and eggs.

LEFTOVER ROAST BEEF NASI GORENG

INGREDIENTS

  • 1 cup brown rice, cook the day before
  • 3 eggs
  • 4 shallots, halved
  • 2 cloves garlic, halved
  • 1 lemongrass stalk, bruised, roughly chopped
  • 1/2 teaspoon dried shrimp paste
  • 6 tablespoons rice bran oil
  • 200g raw prawns, peeled
  • 300g leftover roast beef, thinly sliced
  • 3 spring onions, thinly sliced
  • 2 tablespoons soy sauce
  • 1 cucumber, thinly sliced

INSTRUCTIONS

Whisk eggs in a bowl and season with salt and pepper.  Heat 1 tbsp oil in a frypan over low heat.  Pour in half the egg to make an omelette, set aside to cool.  Repeat with remaining egg.  Once cooled roll up and cut into strips.

Place shallots, garlic, lemongrass and shrimp paste into a food processor and blitz to a fine paste.

In a wok or large fry pan, heat 3 tbsp oil over med heat.  Add the paste and cook 1-2 minutes until aromatic.  Add the prawns and beef, then stir fry until prawns are cooked through.  Add 2 tbsp oil and stir through rice, spring onion and soy sauce.
