Ingredients & substitutes.

Bananas

Use medium sized bananas for this recipe. Also, it’s recommended to use over-ripe bananas, for best results.

Coconut Sugar

Organic Coconut Palm Sugar is a healthier sweetener option compared to it’s white refined sugar counterpart. It is derived from the sap of coconut palm tree, so it is a plant based sweetener with a distinctive flavor. As a substitute, you can use equal amount of jaggery powder if you don’t have coconut sugar available.

Vegetable Oil

I have used Avocado Oil in this recipe, but feel free to use any neutral flavored oil here.

Oats flour

If you don’t have ready-made oats flour or oatmeal available, then you can make your own by pulsing the the old fashioned Quaker Oats (rolled oats) in a food processor. Just a few pulses, and you have your own Oats flour available at home.

Blueberries

I have made the muffins using fresh blueberries. But feel free to use frozen blueberries. Also, you can substitute the blueberries with other berries, like raspberries, chopped strawberries, or even a mixed berry blend.

Spices (Ground Cinnamon & Nutmeg)

Ground Cinnamon and Ground Nutmeg provide the right amount of flavor, warmth and earthiness to the oatmeal muffins. You can increase or decrease the amount of these spices, or even add different spices as per your liking.

Other Ingredients

The other ingredients in the healthy blueberry banana muffins recipe include eggs, vanilla extract, baking soda, baking powder and salt.

How to make the oatmeal banana blueberry muffins?

Here is a simple step-by-step process for making these easy and healthy muffins at home (with process shots)!

Preheat oven to 350 degree F (180 degree C). Mash the bananas in a bowl. Now add coconut sugar, eggs, oil and vanilla extract. Mix everything together till all the ingredients are completely blended.

Add oats flour, baking soda, baking powder, salt, ground cinnamon and ground nutmeg to the wet ingredient mixture. Using a spatula, gently fold in the dry ingredients with the wet ingredients (do not over-mix). Now add the blueberries to the muffin batter.

Gently fold in the blueberries (do not over-mix). Grease a standard muffin pan with oil. Divide the batter into greased muffin cups. Bake the muffins in the oven for around 25-30 minutes or till the muffins are done (when the inserted toothpick in the muffin comes out clean). Remove the muffins from the oven, and allow them to cool for 5-10 minutes.

Tips and notes.

  • If you don’t have oats flour or oatmeal available, then you can make your own by pulsing the the old fashioned Quaker Oats (rolled oats) for a few times in a food processor.
  • You can add some chopped nuts (walnuts, pecans, hazelnuts etc) to the muffin batter if you like.
  • You can even add in some semi-sweet chocolate chips, if you are making the muffins for kids.
  • To freeze the muffins, first option is that you can individually wrap each muffin in a plastic wrap and place them in freezer safe bag, or the second option is to just pop the muffins in a freezer safe bag. To serve frozen muffins, thaw the frozen muffins at room temperature and simply heat them up in the microwave for around 30 seconds.
  • For making gluten free muffins, make sure to use certified gluten free oat flour.

These mini banana blueberry muffins are the perfect first muffins for baby! They have a lovely soft texture that is spongey rather than crumbly and contain no added sugar or salt.

Which like I said make them absolutely perfect as the first muffin for babies starting on finger food.

Ingredients you will need.

To make my mini banana blueberry muffins you will need mashed bananas and blueberries (fresh or frozen blueberries are fine. The remaining ingredients are pantry basics: Flour, baking powder, vanilla essence, eggs and oil/melted butter.

Ingredient Notes and Substitutes.

Blueberries: fresh or frozen.

Oil: If you are using oil, choose a mild flavoured oil, (light olive oil, rice bran oil, coconut oil). Extra virgin olive oil is too strongly flavoured.

Eggs: I have not tested this muffin recipe egg free.

Flour: This recipe does work with a gluten free baking mix.

How to make banana blueberry muffins.

Below are illustrated step-by-step instructions to make my mini banana blueberry muffins, if you prefer just the written instructions then head straight to the printable recipe card below.

Prep: Preheat your oven to 180 degrees celsius, 160 if using a fan-forced oven. (360 Fahrenheit).

Step one:  In a large bowl, mash the bananas with a fork.

Step two: Add eggs, vanilla, and melted butter/oil. Beat these wet ingredients together with a handheld beater (I use an electric one), the batter should become smooth, yellow and a little frothy.

Step three: Add the flour and baking powder. Beat for a further 30-60 seconds to make a well-mixed batter.

Step four: Portion into an oiled muffin tin (I use a non-stick silicone tray sprayed with oil) Mix makes 12 standard-sized muffins or 30 mini muffins.

Step five: Top the muffins with a blueberry or two. Bake at 180 degrees Celsius for 15 mins (360 Fahrenheit), 15 min cook time is based on making mini muffins, the mix makes approx 30 mini muffins. If you are using a standard muffin tray and making approx 12 muffins the cook time will be longer, approx 25-30 mins.

Step six: Cool in the muffin tray for 5-10 minutes before removing and allowing to cool on a rack.

Top Tips.

Here is how you can make these banana blueberry muffins perfectly every time!

  • Ensure the bananas are ripe, even a little over ripe. The mashed bananas do the sweetening in this recipe, if you use an unripe banana the sweetness will just not be there.
  • Try stirring the blueberries through the batter. When I make them for young babies I tend to just stick one blueberry on top. The reason being they can get beyond messy filled with blueberries. Do not get me wrong I am all for kids having fun with food and making a mess, but I often pack these for when we are out and about.  Limiting the blueberries limits the mess! But honestly, you can add more blueberries to the mix too!
  • You can make these muffins mini or large, you will just need to adjust the baking time.
