Hello. Welcome to solsarin. This post is about “peanut butter cookies flourless“.

Peanut butter

Peanut butter is a food paste or spread made from ground, dry-roasted peanuts. It commonly contains additional ingredients that modify the taste or texture, such as salt, sweeteners, or emulsifiers. Peanut butter is consumed in many countries. The United States is a leading exporter of peanut butter and one of the largest consumers of peanut butter annually per capita.[2] January 24 is National Peanut Butter Day in the United States.[3]

Peanut butter is a nutrient-rich food containing high levels of protein, several vitamins, and dietary minerals. It is typically served as a spread on bread, toast, or crackers, and used to make sandwiches (notably the peanut butter and jelly sandwich). It is also used in a number of breakfast dishes and desserts, such as granola, smoothies, crepes, cookies, brownies, or croissants. It is similar to other nut butters such as cashew butter and almond butter.

Can I Use Natural Peanut Butter?

No, a “traditional” peanut butter like Jif or Skippy is best in this flourless peanut butter cookie recipe. Homemade or natural peanut butters don’t always work in baked goods.

Can I Use Crunchy Peanut Butter?

I personally prefer using creamy peanut butter in my baked goods, but I bet crunchy would work just fine here. If you try this out, leave me a comment letting me know what you thought!

Tips for Making the Best Peanut Butter Cookies

If you want to switch up the flavor of these gluten-free peanut butter cookies a little bit, use honey roasted peanut butter instead of regular. Trust me, it’s so good!

Note that you MUST chill the cookie dough before baking it. If you bake with warm dough, the cookies will spread and bake thinner and flatter.

Take the flourless peanut butter cookies out of the oven around the 8-minute mark, even if they still look glossy in the center. They’ll finish setting up as they cool on the baking sheet.

Directions

  1. Preheat oven to 350°. In a large bowl, mix all ingredients. Roll level tablespoons of dough into balls. Place on an ungreased baking sheet; flatten with a fork.
  2. Bake until crisp, 12-15 minutes. Remove to a wire rack to cool

Tips from our Bakers

  • This recipe doesn’t work as well with natural peanut butter as with standard store-bought. The result, when tested, was a drier, more crumbly cookie.
  • If you want this recipe to be dairy-free, make sure to use dairy-free chocolate chips.
  • Join King Arthur baking instructor, Libby Treadway and her son as they bake Flourless Peanut Butter Chocolate Chip Cookies together from start to finish. Watch Baking Flourless Peanut Butter Chocolate Chip Cookies with Kids
  • Here’s an easy way to reduce the carbs and calories in this recipe: substitute King Arthur Baking Sugar Alternative, cup for cup, for the sugar(s) called for. Be sure to substitute by volume (not weight); follow mixing directions as written. Since our Baking Sugar Alternative will bake and brown more quickly, reduce the recipe’s suggested oven temperature by 25 degrees; and start checking cookies for doneness three-quarters of the way through the suggested bake time

HOW TO MAKE FLOURLESS PEANUT BUTTER COOKIES – STEP BY STEP PHOTOS

Preheat the oven to 350ºF. Add one cup natural peanut butter, ¾ cup granulated sugar, ⅔ cup powdered sugar, 1 large egg, ½ teaspoon vanilla extract, and ½ teaspoon baking powder to a bowl. The dough will be easier to mix together if the peanut butter is not chilled

Mix these ingredients together until they form a cohesive dough that is firm enough to pull away from the sides of the bowl

Divide the dough into twelve pieces, roll each one into a ball, then flatten slightly. Use a fork to make a cross hatch pattern in the top of each cookie

I like to bake the cookies on a parchment-lined baking sheet to make cleanup super fast and easy. Make sure to space the cookies a couple of inches apart, as they will grow a bit as they bake

Bake the cookies in a preheated 350ºF oven for 12 minutes. Let the baked cookies cool on the baking sheet for about 5 minutes so they can firm up before using a spatula to transfer to a wire rack (they’ll be super soft when hot

After allowing the cookies to cool completely, store in an air-tight container at room temperature for about a week, or they can be frozen for a few months!

How to make flourless peanut butter cookies

The beauty of this recipe is that there’s a good chance you already have all the ingredients to make these peanut butter cookies. Here’s what’s involved:

  • Creamy or Crunchy Natural Peanut Butter
  • Honey
  • Light Brown Sugar
  • Vanilla Extract
  • 1 Egg

These ingredients are added to a mixing bowl all at once. Then, using a spoon or rubber spatula, mix until it forms a thick dough. The dough will appear very thin at first but as the peanut butter and egg emulsify, the dough will transform from thin and sticky to thick and moldable.

Can these cookies be made vegan?

The only ingredients that aren’t vegan is the honey and one egg in this recipe. To swap this out, use a flax egg instead. Mix 1 tablespoon of ground flaxseed with 2 1/2 tablespoons of water. Let it sit for about 10 minutes to gel before use. Then sub maple syrup for the honey!

WHY YOU’LL LOVE THEM

  • They have a rich, peanut butter flavor. When you make cookies without flour, the peanut butter flavor doesn’t get diluted. This means you’ll wind up with peanut butter cookies that have a rich, peanut butter taste.
  • They’re gluten-free.Perfect for those with special dietary needs.
  • They are SCD friendly. If you follow a protocol like the Specific Carbohydrate Diet, these cookies are sweetened with honey, which is one of the approved sweeteners.
  • They are flexible. If you don’t eat eggs, you can use a flax egg, instead. And if you prefer not to use honey, try swapping it for a 1/2 cup of coconut sugar instead.
  • Easy as possible. With just 5 ingredients, this recipe couldn’t be easier to make. No specialty flours or ingredients required

VARIATIONS

  • Make it nut-free.Use Sunflower Seed Butter or tahini instead of the peanut butter.
  • Make it vegan.Use a flax egg + 1 teaspoon of vinegar to react with the baking soda, and replace the honey with 1/2 cup of coconut sugar

WHY WE LOVE THIS RECIPE:

These cookies do not contain butter or flour which makes them ideal for people who follow a gluten/dairy-free diet.

You are in control of the quality of the ingredients that you use so there need not be any unnecessary preservatives or additives.

This is an ideal recipe to make with children. There is just some stirring and then rolling the mixture into balls. They will love to help.

TIPS FOR SUCCESS AND FAQS:

I know you can’t wait to eat these Flourless Peanut Butter Cookies, but it really is important to set the mixture aside for about 10 minutes to allow it to firm up. This will mean that it is easier to roll into balls. The high oil content of the peanut butter means the dough will not stick to your hands.

Do not leave the cookies in the oven too long. They are ready when the edges appear light brown. It may be best to remove the tray from the oven so you can clearly see the edges. If they over bake, they will become dry and crumbly.

What can I top the cookies with?

Sprinkle a little sea salt or drizzle the cookies with melted chocolate – delicious

. Why do peanut butter cookies have fork marks?

This flourless peanut butter cookie dough is denser than other cookie dough. Pressing the cookie dough down with a fork while making a criss cross pattern flattens the cookie dough and makes them bake more evenly.

NOTES

Ingredient Substitutions

  • Creamy peanut butter. choose your favorite peanut butter variety! Allergic to peanuts? Any nut or seed butter should work well in this recipe!
  • Use granulated sugar or organic cane sugar for the best results. Note. I tired coconut sugar and it did not work.
  • Drizzling chocolate on top of these cookies, or adding chocolate chips to the batter, is optional, but delicious!
