Now I know that casseroles aren’t fancy but sometimes you just have to get ‘er done.

This Poppy Seed Chicken casserole is great for taking into a friend who had a baby and freezes well for those busy nights

INSTRUCTIONS

  1. Preheat oven to 350 degrees.
  2. Place cubed chicken in a 9X13 casserole dish. *Note: Some people layer some cooked rice on the very bottom underneath the chicken so that it’s a meal in one.
  3. Stir together the condensed soup and sour cream. If you wish to add the additional flavorings see notes. Pour over the chicken.
  4. In a separate bowl, stir together the crushed crackers and melted butter. Sprinkle over the chicken and sauce. Sprinkle the poppy seeds on top.
  5. Bake for 20-30 minutes in the preheated oven, until the top of the casserole is browned and the sauce is bubbly. Serve plain or over rice. We like to eat it with steamed broccoli and we mix it all together.

  2. In a large bowl, combine all of the ingredients for the sauce. Even though I don’t use it often, this is one dish where I just think nothing is quite as good as cream of chicken soup. It sure makes it easy to throw this together on busy nights. Mix that up with some sour cream, parmesan cheese, dried parsley, a little garlic powder, pepper, and of course, poppy seeds. Then add the chicken and dump it all into a large 9×13″ baking dish.
  3. While I’m getting the chicken ready, I usually hand one of my kids a rolling pin and a bag of Ritz crackers and ask them to smash the crackers for me. Then I dump the crushed crackers into a bowl with melted butter and stir them together.
  4. Sprinkle the buttery crushed crackers over the chicken mixture, then slide the casserole into the oven to bake for 35 to 40 minutes until it’s hot and bubbly. The crushed cracker topping will toast slightly and be such a wonderful contrast to the creamy sauce and tender chunks of chicken beneath!

HOW TO MAKE POPPY SEED CHICKEN CASSEROLE

Start by cooking a couple cups of white or brown rice. It can be as simple as minute rice. Then spread it into the bottom of a greased casserole dish.

Melt the butter in a large skillet over medium low heat. Once melted sprinkle in the flour and whisk it in. Continue cooking for 2 minutes while whisking continuously. Whisk in the seasoned salt and fresh ground black pepper. Now slowly whisk in the chicken broth and milk alternating between the two. Continue cooking over medium low heat until thickened. Then stir in the sour cream.

Then in a small bowl mix together the melted butter, cracker crumbs, and poppy seeds. Top the rice in the casserole dish with half the chicken soup mixture. Then top with the diced chicken, the rest of the chicken soup mixture, and the poppy seed crumb topping.
