Hello. Welcome to solsarin. This post is about “poppy seed chicken casserole recipe“.

The chicken (Gallus domesticus) is a domesticated junglefowl species, with attributes of wild species such as the grey and the Ceylon junglefowl[1] that are originally from Southeastern Asia. Rooster or cock is a term for an adult male bird, and a younger male may be called a cockerel. A male that has been castrated is a capon. An adult female bird is called a hen and a sexually immature female is called a pullet.

Originally raised for cockfighting or for special ceremonies, chickens were not kept for food until the Hellenistic period (4th–2nd centuries BC).[2][3] Humans now keep chickens primarily as a source of food (consuming both their meat and eggs) and as pets

The type of food most searched for on this blog is “Casseroles”.

Which tells me that you are just like me in the fact that sometimes you just need an easy casserole to feed the troops and call it good.

Now I know that casseroles aren’t fancy but sometimes you just have to get ‘er done.

I’ll be honest…some days I’m lucky if I get a shower and others I’m more together and want to put a little more effort into dinner

So I’ve included the basic poppy seed chicken recipe which by itself is awesome…and then additional ingredients I like to add to make it a little bit more fantastic when I have the time.

Oh yeah, and kids love this which makes for a tantrum free dinner table

This Poppy Seed Chicken casserole is great for taking into a friend who had a baby and freezes well for those busy nights

  1. Preheat oven to 350 degrees.
  2. Place cubed chicken in a 9X13 casserole dish. *Note: Some people layer some cooked rice on the very bottom underneath the chicken so that it’s a meal in one.
  3. Stir together the condensed soup and sour cream. If you wish to add the additional flavorings see notes. Pour over the chicken.
  4. In a separate bowl, stir together the crushed crackers and melted butter. Sprinkle over the chicken and sauce. Sprinkle the poppy seeds on top.
  5. Bake for 20-30 minutes in the preheated oven, until the top of the casserole is browned and the sauce is bubbly. Serve plain or over rice. We like to eat it with steamed broccoli and we mix it all together.

Instructions Checklist

  • Step 1

Place chicken breasts into a large pot; cover with water and bring to a boil over high heat. Reduce heat to medium, cover, and simmer until chicken is no longer pink in the center, about 20 minutes. Drain; shred chicken with two forks.

  • Step 2

Preheat the oven to 350 degrees F (175 degrees C). Mix crackers, melted butter, and poppy seeds together in a large bowl until combined; set aside.

  • Step 3

Stir condensed soup and sour cream together in a medium bowl; pour 1/2 of the mixture into a 9-nch square baking dish. Add shredded chicken in an even layer; top with remaining soup mixture. Sprinkle with Cheddar cheese, then top with cracker mixture.

  • Step 4

Bake in the preheated oven until cheese has melted and the sauce is bubbly, 25 to 30 minutes.

My neighbor brought me this casserole after I had my last baby and oh man, the family DEVOURED it. I know a recipe is good in my book if the entire family eats it and it is picky eater approved. This casserole is so simple, but yet so good and flavorful. Our favorite part of this meal is the buttery ritz crackers on top. This is one of those delicious easy meals. I like how fast it is ready. We served ours over rice with a side of green beans. I know that your family will love this just as much as we did

How do you make Poppy Seed Chicken Casserole?

  • In a large bowl, add cooked chicken, sour cream, cream of chicken soup, shredded parmesan cheese, and poppyseeds. Mix until incorporated. Spread along the bottom of a 2 quart casserole or 9×9 inch pan.
  • Crush ritz cracker and add melted butter and toss to coat in the butter. Sprinkle on top of the chicken mixture. Bake for 25-30 minutes or until bubbly.
  • This easy, delicious Poppy Seed Chicken Casserole is a comfort food classic with tender chunks of chicken in a creamy sauce with a crunchy, buttery Ritz cracker topping! Poppy Seed Chicken Casserole is an all time family favorite.

Why We Love This Recipe

  • Simple ingredients mean you have everything on hand or can easily find it at your grocery store.
  • It’s fast and easy, taking a total of 35 minutes from start to finish.
  • This is good old fashioned comfort food from the creamy sauce to the crunchy cracker topping!

How to Make Poppy Seed Chicken Casserole

  1. To make this creamy chicken casserole, you need about 5 cups of cooked chicken. Rotisserie chicken works great and cuts your prep time significantly. But you can also just boil or bake chicken breaststo have on hand for a recipe like this. Chop the cooked chicken into bite-size pieces then set aside.
  2. In a large bowl, combine all of the ingredients for the sauce. Even though I don’t use it often, this is one dish where I just think nothing is quite as good as cream of chicken soup. It sure makes it easy to throw this together on busy nights. Mix that up with some sour cream, parmesan cheese, dried parsley, a little garlic powder, pepper, and of course, poppy seeds. Then add the chicken and dump it all into a large 9×13″ baking dish.
  3. While I’m getting the chicken ready, I usually hand one of my kids a rolling pin and a bag of Ritz crackers and ask them to smash the crackers for me. Then I dump the crushed crackers into a bowl with melted butter and stir them together.
  4. Sprinkle the buttery crushed crackers over the chicken mixture, then slide the casserole into the oven to bake for 35 to 40 minutes until it’s hot and bubbly. The crushed cracker topping will toast slightly and be such a wonderful contrast to the creamy sauce and tender chunks of chicken beneath!

Can This Recipe for Poppy Seed Chicken Be Made Ahead?

This is a great make-ahead chicken casserole dinner. Assemble the casserole up to 24 hours in advance and keep it covered in the refrigerator until ready to bake.

  • Tip:Wait to put the cracker mix together until right before baking to help the topping stay delightfully crispy!

A quick and easy classic Poppy Seed Chicken Casserole Recipe with white rice, homemade cream of chicken soup, already cooked rotisserie chicken breasts, poppy seeds, and a buttery cracker crumb topping. This tasty casserole is always a huge hit with family and friends. The easy made from scratch creamy sauce takes this dish over the top with that down on the farm homestyle cooking.

Start by cooking a couple cups of white or brown rice. It can be as simple as minute rice. Then spread it into the bottom of a greased casserole dish.

Melt the butter in a large skillet over medium low heat. Once melted sprinkle in the flour and whisk it in. Continue cooking for 2 minutes while whisking continuously. Whisk in the seasoned salt and fresh ground black pepper. Now slowly whisk in the chicken broth and milk alternating between the two. Continue cooking over medium low heat until thickened. Then stir in the sour cream.

Then in a small bowl mix together the melted butter, cracker crumbs, and poppy seeds. Top the rice in the casserole dish with half the chicken soup mixture. Then top with the diced chicken, the rest of the chicken soup mixture, and the poppy seed crumb topping. Bake for 25-30 minutes or until the casserole is heated through and the crumb topping is golden brown.

  • I love to use fresh baked rotisserie chicken for this recipe but any cooked chicken will work including canned chicken. We love Kirkland brand chicken from Costc
