  • 1 tsp sweet paprika
  • chicken thigh cutlets, skin removed
  • 2 rindless bacon rashers, coarsely chopped
  • 2 tbsp cornflour
  • 2 tsp dry mustard powder

  • 160ml (2/3 cup) Massel Chicken Style Liquid Stock
  • 2 tbsp wholegrain mustard
  • 1 tbsp dijon mustard
  • 2 tbsp honey
  • 80g (1/2 cup) frozen peas, thawed
  • 2 tbsp cooking cream
  • 2 tbsp chopped fresh flat-leaf parsley leaves

3 Method Steps

  • Combine the oil and paprika in a large bowl. Add chicken and toss to coat. Heat a large non-stick frying pan over medium-high heat. Add chicken and cook, turning, for 5 minutes or until browned. Transfer to a plate. Add bacon to pan and cook, stirring, for 5 minutes or until golden and crisp. Transfer to plate.
  • Place the cornflour and mustard powder in a slow cooker. Gradually whisk in stockmustards and honey until smooth. Add the chicken and bacon to the cooker and gently stir to combine. Cook on Low for 4 hours (or High for 2 hours), stirring in the peas and cream in the last 10 minutes of cooking.
  • Serve the chicken sprinkled with parsley.

  • 1 tbsp butter
  • chicken thighs (or fillets if you prefer)
  • 8 spring onions, cut into lengths
  • 150ml chicken stock
  • 1 tbsp Dijon mustard
  • 2 tbsp honey
  • 2 tbsp double cream or crème fraîche
  • 100g frozen peas

Method

  • STEP 1

    Heat the slow cooker. Melt the butter in a frying pan and quickly brown the chicken thighs all over. Make sure the skin picks up plenty of colour. Season, then put them in the slow cooker. Brown the spring onions and add them to the slow cooker as well. Add the stock, mustard and honey and cook on low for 4 hrs.

  • STEP 2

    Stir in the cream or crème fraîche and peas, then cook for a further 15 mins with the lid off. Re-crisp up the chicken skin under the grill, if you like.

  • Dijon mustard is made with white wine (or wine vinegar) and can add a great flavor to this dish.
  • You can use Grey Poupon Dijon Mustard though I suggest only using 1/4 cup and using 1/4 cup standard yellow mustard as well.

Can I use a different cut of chicken?

This recipe is very versatile! You can use any of these chicken cuts with great results. Anything with skin on it I would remove before serving.

INGREDIENTS

  • 2 to 2.5 pounds (910g-1140g) boneless skinless chicken breasts or chicken thighs
  • 1/2 cup (120ml) honey
  • 1/4 cup (60ml) soy sauce (or Tamari for gluten free)
  • 1/4 cup (60ml) mustard
  • 2 Tablespoons (30ml) malt vinegar (or distilled vinegar for gluten free)
  • 4 garlic cloves , mashed
  • 1/2 teaspoon fresh ground black pepper , or to taste

TO THICKEN THE SAUCE (OPTIONAL)

    • 2 Tablespoons (30ml) cornstarch
  • 2 Tablespoons (30ml) water

INSTRUCTIONS

    • In a 4 quart slow cooker, combine honey, soy sauce, mustard, malt vinegar, garlic and black pepper. Stir to combine all ingredients together well.

      Add the chicken and press chicken down to cover it in as much sauce as possible.

    • Cook the chicken 4-5 hours on High or 6 hours on Low until the chicken is moist and tender.

      Stir the chicken about 2 times, if possible, during the cooking and push the chicken down so it’s immersed in the sauce.

  • Optional: to thicken the sauce (do this about 1 hour before chicken is finished cooking). Make the corn starch slurry: mix cornstarch and cold water in small bowl. Stir the mixture so that all the cornstarch is completely dissolved, leaving no lumps.

    Quickly stir in the cornstarch slurry into the crock pot teriyaki mixture and combine well so that the cornstarch doesn’t thicken and become lumpy. Finish cooking for the final hour.

  • Serve the hot and delicious chicken over rice, pasta or in a sandwich!

Should You Flip Chicken Over in a Slow Cooker?

Flipping isn’t necessary. The way a slow cooker cooks is similar to a pot on the stovetop. The food cooks in liquid and steam created by the slow cooker.

Should the Liquid Cover the Meat When Using a Slow Cooker?
