I grew up on my Dad’s grilled steaks. From a very young age, if someone would ask me what I wanted for dinner I would tell them I wanted steak and by steak, I meant my Dad’s steak!

When I grew up and moved away, I missed my Dad…and I missed his steaks! I learned enough from watching him to make a passable steak. I even received compliments when I made them for friends, but I knew they weren’t as good as my Dad’s steaks.

 

I love when I get to share tips with you from other OGT readers! I feel so fortunate when any of you take time out of your day to share an idea or experiences with me. It’s truly one of my favorite aspects of this job!

Today’s tip comes to us from Ronda, a Las Vegas native with a particularly juicy secret for cooking up tender and beautiful steaks. She said that she learned this tip from one of the Strip’s top Executive Chefs, which seemed like reason enough to give it a try for myself!

My husband’s father is great at grilling steaks too, but for some reason, he never passed on his knowledge to my husband. I don’t fault him. If my husband was anywhere near as wild as our boys are, I wouldn’t have let him near fire either.

After we married, I would occasionally grill, but as I had children it became harder to do. Shortly after having my second child, my Dad came to visit and offered to grill steaks for me. In my sleep-deprived state, I grabbed him and said, “You must teach my husband how to grill. And not just grill, you must teach him how to grill your steaks”. I am pretty sure both my Dad and my husband thought I was out of my mind, but they are smart enough not to argue with a crazed, sleep-deprived new mother, so they readily agreed to my demands.

Now that my husband is so good at grilling steaks, I prefer to eat at home on the weekends instead of going out for dinner! Especially since for the cost of one dinner at a steak house, I can buy several pounds of Cattleman’s Beef.

The most important step to grilling steaks is to start with good steaks! I picked up Cattleman’s Finest New York Strip Steaks at Smart & Final. My husband also likes Rib Eye steaks. I like sirloin steaks, though my husband thinks they are usually a little too lean. You want some marbling in your steaks. Yes, I realize the marbling is fat, but it does produce a more flavorful steak.

The secret formerly secret ingredient is Worcestershire Sauce. Steak immersed in Worcestershire sauce before grilling is incredibly flavorful! My Dad always used it and now my husband does too. He marinates the steaks in Worcestershire sauce for about an hour before grilling. Then he adds the spices before placing them on the grill.

 

Every time my husband makes steaks, I tell him I need to share the recipe for his Worcestershire Steak Marinade, but he always says, “No, it’s too simple to share”. But he forgets that at one time, he didn’t know how to use Worcestershire sauce on steaks, so it can’t be that simple. Besides, just because a recipe is simple, doesn’t mean it isn’t a great recipe!

Grilled Steaks with Worcestershire Sauce Marinade Recipe

Ingredients:

  • 2 -3 pounds steak
  • ¼ cup Worcestershire Sauce
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • ½ teaspoon pepper

Directions:

  1. Pour the Worcestershire sauce over the steaks. Flip to coat the steaks. Let the steaks marinate in the Worcestershire sauce for 30 minutes to an hour.
  2. Light the charcoal about 15 minutes before you want to grill.
  3. Sprinkle half the garlic powder, onion powder, and pepper on the steaks. Flip the steaks and sprinkle the rest the spices on the other side of the steaks.
  4. Spread the coals out.
  5. Place the steaks on the grill. Grill for 4 – 6 minutes depending on how close the steaks are to the heat source.
  6. Flip and grill for another 4 – 6 minutes.
  7. Flip and grill for 2 – 3 minutes.
  8. Flip one last time and grill for an additional 2 – 3 minutes.
  9. Remove the steaks from the grill and allow them to rest for about 5 minutes before serving.

 

We have a deep charcoal grill, so my husband grills the steaks for 6 minutes on each side and then cooks them for 3 minutes on each side. However, my husband said, that you can reduce this time if you are working with a grill where the heat source is closer to the meat.

 

My husband likes his steak well done, so he cooks it to an internal temperature of 150. I like mine medium rare, so he cooks my steak to an internal temperature of 135. My kids prefer medium steaks, so he cooks theirs to an internal temperature of 140.

A Very Secret Steak Marinade

According to Ronda and her chef friend, using Worcestershire sauce as a marinade yields tender steaks that have a beautiful glaze. I admit I didn’t actually know very much about Worcestershire sauce when she told me this, so I did some digging to better understand how it could work as a marinade.

As it turns out, Worcestershire sauce already contains many of the components of a good marinade! It has vinegar to tenderize the meat, sugar for sweetness and shine, and savory flavors like onion, garlic, tamarind, and anchovies.

Worcestershire sauce is also quite concentrated, so it’s able to penetrate deeply into the meat. If you’re a fan of rich “umami” flavors and tender textures, you’ll definitely want to give this marinade a try the next time you fire up the grill!

How To Marinate Steaks With Worcestershire Sauce

You’ll need:

  • Steaks (see below)
  • Plastic ziplock bag OR a ceramic bowl OR a glass bowl
  • 1/2-1 cup Worcestershire sauce

Directions:

Place the steaks in a ziplock bag and pour in 1/2 cup of Worcestershire sauce. (If you’re using a bowl, place the steaks in the bowl and pour 1 cup of Worcestershire sauce over them.)

Let the steaks marinate for about 2 hours, or at least 30 minutes, turning the steaks occasionally for even saturation. After marinating, remove the steaks and pat them dry on both sides with a paper towel.

Place them on a hot skillet or grill and cook to your desired temperature.

What Kind Of Steak Should I Use?

Need help choosing steaks? Here are a few of my favorites:

  • Tenderloin/Filet Mignon – This pricey cut is melt-in-your-mouth tender, so it’s great for special occasions. Sear it in a hot pan and finish it off in the oven to medium-rare perfection.
  • New York Strip/Top Sirloin – This juicy cut has great marbling and delicious flavor. It’s also pretty reasonable in terms of price compared to fancier cuts!
  • Flank Steak – Flank steaks are a great choice when you’re using a marinade. For maximum tenderness, cut it into thin strips across the grain before marinating!

  • Salt-free lemon pepper can be hard to find. If you only can find the lemon-pepper containing salt, don’t add it to the steaks until just before grilling. And omit the kosher salt (see steps below).
  • You can always make your own lemon pepper, too: For 1 teaspoon lemon pepper substitute 1/2 teaspoon lemon zest + 1/8 teaspoon fine ground pepper
