Most of these ingredients – like ground beef, onion, and melted cheese – are things that you can have on-hand at any time, so if you need a last minute recipe, this is the best option! I don’t know about you, but I like to have a handful of recipes that I can make last minute, so be sure to add this one to your list. It’s one that the whole family will love!

I have seen a lot of dinner recipes around, but I really like a tater tot casserole with cream of chicken soup. There is something about the flavors that really makes it pop! And because of that, I really do think this is the best Tater Tot Casserole recipe – especially on a busy night.

This classic is like your typical hotdish, but with only onions as your vegetable and made using condensed cream of chicken soup (as opposed to cream of mushroom soup, which is also used sometimes). It’s also kind of like a chicken pot pie made with beef and has crispy tater tots on top! If you do want some additional vegetables though, consider draining and then adding a can of green beans to the beef mixture towards the end of cooking it on the stove.

There are only a handful of ingredients, so it is something that anyone can make. Your tater tots will be layered on top of your beef and soup mixture with your cheese above. It is quick and easy, and only bakes for half an hour, so by the time you’ve cut up some fruit or made a salad, dinner will be almost ready.

If you do not eat red meat, you can substitute ground turkey for the ground beef. It will still have as much flavor because of the other ingredients, and it won’t change the cook time. It’s a very easy dinner recipe to make alterations to.

Preheat your oven to 375 degrees. In a large skillet, cook the ground beef, onion, and garlic on medium-high heat until the ground beef is cooked through. If you don’t have a white onion available, you can use a yellow onion for a slightly sweeter flavor or 1 tsp onion powder instead.

Drain the ground beef (if it is lean ground beef there won’t be much to drain, so don’t let that concern you) and mix the can of cream of chicken soup into the beef.

Now it’s time for the easy layers. Grease a 9×9″ baking dish with non-stick cooking spray and pour the meat mixture into a single layer.

Top the beef mixture with a layer of frozen tater tots and spread them as evenly as possible.

 

Bake for 25-30 minutes, but plan to pull it out of the oven 5 minutes before it is done.

At this point, take your casserole out of the oven and pour your shredded cheese over the top of the tater tots.

Serve immediately after removing the casserole dish from the oven. Top each serving with a small dollop of sour cream if you should choose. Enjoy!

This recipe calls for cream of chicken, but there are other canned soups that you can use in a pinch. If you only have cream of celery or a can of cream of mushroom on-hand, you can use them. I usually try to add a couple of veggies into the casserole and then serve a toasted garlic bread because this meal typically means, “I’m tired” and “I needed something fast and hot to fix with very little clean up” as well as, “Everyone rinse your own plate and put it in the dishwasher, thanks, I’m pooped and done for today”.

  • Sour Cream – switch in some plain greek yogurt or use the vegetarian option instead. Don’t have any of those? Add in an extra can of “cream of something” soup.
  • Soup – don’t want to use a canned soup? No problem, there are about a gozillion recipes out there for homemade cream of chicken soup options to use. You can substitute any of the “cream of” soups like celery, mushroom or golden soups.
  • Veggies – I’m using canned diced potatoes in this video, but you could use any of the following alone or in combination: peas, carrots, green beans, black beans, pintos, corn, mexicorn, spinach, etc. etc. etc.
  • Hidden Valley Ranch – you could actually leave this out if you are super opposed, BUT I highly recommend you leave it in, especially if you are trying to interest kids in your dish. It helps out the flavor and makes everything meld together just right flavor-wise.
  • Ground Beef – feel free to substitute in ground turkey, ground chicken, sausage, lamb or any combination of these. Vegetarian ground beef options work too but remember to watch your salt, don’t add any until it’s all mixed up, then you can taste and add if you want.

  • Always use a pan that can go from the stovetop to the oven and this will save lots of dishwashing!
  • Use a ground beef that doesn’t have so much fat, so that you don’t have to strain out so much. Because of the other ingredients in this recipe, there isn’t so much worry about getting flavor from the beef.
  • Change up some of the ingredients here based on the substitutions and make this recipe totally yours or made with ingredients you have on hand.
  • Tater tots are great, but if you don’t have any, fries or hash browns work just as good with this recipe.
