An easy, spot-on copycat recipe for Chipotle’s Tomatillo-Green chili  Salsa, their medium-heat version of Salsa Verde.

Ingredients

  • 2 pounds tomatillos husks removed, halved
  • 1 roma tomato halved
  • 1-2 jalapeño peppers stemmed, seeded if desired (see note 1)
  • 1/2 red onion cut into large chunks
  • 2 cloves garlic
  • 1/2 cup cilantro leaves loosely packed
  • 1 teaspoon ground cumin ground
  • 1/2 teaspoon oregano dried
  • Salt and freshly ground black pepper
  • 1/4 cup fresh lemon juice (from 1-2 lemons)
  • 1/4 cup fresh lime juice (from 2-4 limes)

Instructions

  • Preheat oven to 500 degrees. Line a baking sheet with aluminum foil. Hold 4 raw tomatillos back, but place the rest of the halved tomatillos and the roma tomato skin-side down on the baking sheet. Bake until they begin to toast, about 20 minutes.
  • In a food processor, combine the roasted tomatillos and tomatoes, the raw tomatillos, jalapeños (start with a half jalapeño if you’re not sure, see note 1), red onion, garlic, cilantro, cumin and oregano. Pulse until the mixture is mostly smooth with some texture (see note 2).
  • Taste and add more chiles and/or seeds depending on your preference for spiciness. Remember, the salsa tastes spicier when warm and when tasted without food. It will be milder after chilling and when eaten with food.
  • Add lemon and lime juices, and season to taste with salt and pepper (I like 1 teaspoon salt and ½ teaspoon pepper). Yield: About 2 cups.

Ingredients

  • 2 pounds tomatilloswith husks intact and smooth
  • 1 roma tomato
  • 3 fresh jalapeñoswith seeds and membranes
  • ¾ of a red onion
  • 4 large cloves garlic
  • ½ cup fresh cilantro
  • 2 tablespoons lemon juicefreshly squeezed
  • 2 tablespoons lime juicefreshly squeezed
  • 1 ½ teaspoons kosher salt
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • ½ teaspoon black pepper

Instructions

  • Carefully peel off the husks and rinse the tomatillos to remove the sticky residue from their skins.  Cut them in half and place them cut side down on a large, foil-lined cookie sheet.
  • Split the tomato and two of the fresh jalapeños in half and place them cut side down on the cookie sheet.
  • Char the veggies at 450 F for 15-25 minutes.  You can also turn the broiler on high for the last 2-3 minutes of the cooking time to really char them a little more.  Remove them from the oven and let them cool for a few minutes.
  • Dump the roasted veggies and any juices from the tray into a food processor.  Add the onion, garlic, cilantro, citrus juices, and spices and pulse to combine.
  • Gradually add some of the remaining fresh jalapeño with the seeds and membranes to make the salsa medium spicy.  I used about ¾ of the fresh pepper, but the amount of spice is up to you.
  • Taste the salsa and adjust the amount of lemon and lime juice and spices to taste.  Keep in mind that the salsa will taste less spicy when it is cold and when it is served with other foods.
  • Serve the tomatillo green salsa right away with tortilla chips or other Mexican dishes.  Cover and refrigerate leftovers for up to 1 week.  The salsa will thicken dramatically in the fridge from the naturally occurring pectin in the tomatillos, but simply stir it well before serving.

Chipotle’s tomatillo salsa is considered their medium spiced salsa. It is slightly spicy, but not overbearing. By making it at home, you can control the spice level even more!

Yes! To freeze, simply pour into a freezer safe jar or bag for up to 6 months. Then when ready to eat, place in the refrigerator until completely thawed.

This Tomatillo Green Chili Salsa is a Chipotle Copycat inspired recipe using fresh tomatillos, poblano peppers, jalapeño peppers and canned green chilis. This salsa recipe tastes like it takes a lot of work to prep but is actually quite simple to whip up!

Ingredient

  • Tomatillos: The star of the show! Tomatillos are tart in flavor and a little more bright and a little citrusy!
  • Yellow Onion: You could also use red onion or white onion.
  • Poblano Pepper: Similar to a green pepper but with a little more kick! I love the addition of poblano peppers in this salsa.
  • Jalapeños: For the heat! Use more or less depending on your preference.
  • Garlic Cloves: Garlic is a must in salsa!
  • Canned Fire-Roasted Green Chilis: These chilis are mild in spice but the canned variety is packed with flavor and I always have a can on hand so I love to throw them in! But you can leave it out if you don’t have any as long as you include the poblano peppers and jalapeño peppers.
  • Limes: Acidity and balance!
  • Cilantro: Leave it out if you must but it brings an earthy delicious flavor and I usually add double the amount I put in the recipe card. I love cilantro!

How to Make This Recipe

This roasted green chili salsa comes together by broiling tomatillos, poblano peppers, jalapeños, garlic and onion and placing in a food processor with cilantro and lime then pulsing until combined. This roasted tomatillo salsa is simple to make, packed with tons of flavor, and versatile enough to a wide variety of meals! Let’s break it down.

Remove the husks from the tomatillos and give them a nice wash. Under the husk is a sticky residue which you can rinse off with cold water. That stickiness is a natural insect deterrent the plant has developed which is pretty cool.

Cut them in half and place them cut side down on a large baking tray along with 1/2 of a medium yellow onion, poblano pepper that has been halved and deseeded, and 1-2 jalapeños depending on spice preference. On that same baking tray, add the whole garlic cloves and 2 limes cut in half, cut side up.

Let cool for a few minutes then add all the ingredients to a food processor including the juice from the roasted limes. Add in the cilantro as well as salt and pepper. Blend together until the salsa is well incorporated but still chunky.

Chipotle Style Tomatillo Green Chili Salsa

INGREDIENTS

  • ½ pound tomatillos husks removed and washed, chopped
  • 3 Poblano chilies skins charred and removed, seeded and deveined
  • 3 Tablespoons chopped cilantro
  • 1 small onion chopped
  • Salt to taste

INSTRUCTIONS

  • Add the chopped tomatillos to boiling water and cook until the tomatillos are soft, about 10 minutes. Drain off the excess water but reserve it for use later.
  • Place the poblano peppers on a hot grill and char the skin until black and blistered.
  • Remove from heat and immediately place the hot peppers in a plastic bag and allow them to steam.
  • When cool, open the bag and peel the skin off the peppers. Cut one side of the pepper open and scrape out the seeds and membrane.
  • Chop the poblanos and add to a food processor or blender with the remaining ingredients.
  • Blend until mostly smooth but leave it a little chunky. Add salt add desired. If the salsa is too thick add some of the tomatillo cooking water to thin it. Yield: about 2 pints.

  • Since it contains fresh cilantro this salsa is best consumed within 72 hours and should be kept refrigerated when not being consumed. If you skip the cilantro you could keep it for up to 5 days if kept refrigerated.
  • I do not recommend freezing Chipotle Tomatillo Green-Chili Salsa.
