THE CABBAGE SOUP DIET

Cabbage soup is the magical soup that’s supposed to help with weight loss and there is even a diet named after it called the Cabbage Soup Diet. It is a very strict diet where you can lose up to 10 pounds. For an entire week, you eat large amounts of this soup but during this time (7 days) you can also eat other foods like fruits and vegetables, beef, chicken, and brown rice according to Mayo Clinic’s website.

I give props to anyone that can follow a strict diet like that. I could never just eat cabbage soup for that long of a time period. In fact, I’d get pretty bored with it. That is the brilliant part about myWW. It’s zero points and can be served for lunch or dinner. Plus, you’re getting in vegetables for the day.

DOES CABBAGE SOUP HELP WITH WEIGHT LOSS?

To lose body fat you need to be in a calorie deficit whether or not you track calories or points. This cabbage soup is very low in calories and is a wonderful addition to your diet.

Your body needs other nutrients like proteins, fat, and whole grains to help you feel full and keep you satisfied all day. If all you ate was cabbage soup all day long, you’d be starving for the whole entire time, so please eat this soup with other healthy foods!

HOW TO MAKE CABBAGE SOUP

  1. Spray pot with nonstick cooking spray. Saute onions carrots and garlic for 5 minutes.
  2. Add broth, Tomato paste, cabbage, green beans, basil, oregano, and Salt & Pepper to taste.
  3. Simmer for about 5-10 minutes until all vegetables are tender then add the zucchini and simmer for another 5 or so minutes.
  4. I have tried different variations. Leaving out green beans. Adding chopped green onions in addition to the yellow onion.
  5. All very good. You can customize it to your liking.

CAN CABBAGE SOUP BE MADE IN AN INSTANT POT?

Combine cabbage, onions, carrots, green beans, and zucchini to an Instant Pot with the garlic, tomato paste, and beef broth. Add the seasonings.

Close and lock the lid. Select high pressure according to manufacturer’s instructions; set timer for 15 minutes. Allow 10 to 15 minutes for pressure to build. Release the pressure using a natural release method.

SLOW COOKER METHOD:

Add all the ingredients to your slow cooker and cook on low for 4 to 5 hours.

  • 1 tablespoon tomato paste
  • 2 cups chopped cabbage

  • 1⁄2 cup chopped zucchini yellow or green
  • 1⁄2 teaspoon basil
  • 1⁄2 teaspoon oregano

WHICH STOCK CAN I USE IN THIS CABBAGE SOUP RECIPE

I tend to use stock made up with a stock / bouillon cube for this recipe – partly because it is cheaper to do so. However, you could use fresh stock instead. One stock cube / bouillon cube works out at 1 Smart Point per cube and I use 1 cube in this recipe.

Many supermarket brought beef stocks also work out at 1 Smart Point for 700 ml but just make sure that you check the nutritional information before using.

CAN I USE VEGETABLE STOCK / CHICKEN STOCK

Of course!

I do prefer to use beef stock in this recipe but if you are wanting to make a vegetarian Cabbage Soup then vegetable bouillon is a good alternative.

HOW LONG WILL IT LAST IN THE FRIDGE

This soup will last for up to 3 days in the fridge. If you don’t think that you would finish it within that time, I would suggest that you freeze it in single portion bags.

CAN I FREEZE CABBAGE SOUP

Yes! This Cabbage Soup freezes well. But do make sure that you chill it completely before portioning it up and freezing it.

I find these reusable silicone bags perfect for this purpose. When you want a serving of soup, just pull a bag out of the freezer, defrost, reheat and serve!

Yup! After you’ve browned the turkey – you can transfer everything to the slow cooker and cook on low for 4 hours. I would still reserve the zucchini and add in the last 30-60 minutes so it doesn’t just disintegrate.

How do you reheat cabbage soup?

To stay super simple, the microwave truly is the best for 1-2 helpings. But if you have a larger bowl of leftovers, reheating over medium heat on the stove top is great too. You can always add more broth, water or veggies if you’d like too! (Great way to use up leftovers!)
