Instructions Checklist
Place chicken breasts into a large pot; cover with water and bring to a boil over high heat. Reduce heat to medium, cover, and simmer until chicken is no longer pink in the center, about 20 minutes. Drain; shred chicken with two forks.
Preheat the oven to 350 degrees F (175 degrees C). Mix crackers, melted butter, and poppy seeds together in a large bowl until combined; set aside.
Stir condensed soup and sour cream together in a medium bowl; pour 1/2 of the mixture into a 9-nch square baking dish. Add shredded chicken in an even layer; top with remaining soup mixture. Sprinkle with Cheddar cheese, then top with cracker mixture.
Bake in the preheated oven until cheese has melted and the sauce is bubbly, 25 to 30 minutes.

My neighbor brought me this casserole after I had my last baby and oh man, the family DEVOURED it. I know a recipe is good in my book if the entire family eats it and it is picky eater approved. This casserole is so simple, but yet so good and flavorful. Our favorite part of this meal is the buttery ritz crackers on top. This is one of those delicious easy meals. I like how fast it is ready. A quick and easy classic Poppy Seed Chicken Casserole Recipe with white rice, homemade cream of chicken soup, already cooked rotisserie chicken breasts, poppy seeds, and a buttery cracker crumb topping. This tasty casserole is always a huge hit with family and friends. The easy made from scratch creamy sauce takes this dish over the top with that down on the farm homestyle cooking.
Start by cooking a couple cups of white or brown rice. It can be as simple as minute rice. Then spread it into the bottom of a greased casserole dish.
Melt the butter in a large skillet over medium low heat. Once melted sprinkle in the flour and whisk it in. Continue cooking for 2 minutes while whisking continuously. Whisk in the seasoned salt and fresh ground black pepper. Now slowly whisk in the chicken broth and milk alternating between the two. Continue cooking over medium low heat until thickened. Then stir in the sour cream.
Then in a small bowl mix together the melted butter, cracker crumbs, and poppy seeds. Top the rice in the casserole dish with half the chicken soup mixture. Then top with the diced chicken, the rest of the chicken soup mixture, and the poppy seed crumb topping. Bake for 25-30 minutes or until the casserole is heated through and the crumb topping is golden brown.
