A good rule of thumb is to cook pork loin 25 minutes per pound at 350 degrees F (177 degrees C). The internal temperature should be at least 145 degrees F (63 degrees C), so use a thermometer to know when it’s done.
Aim for about 180°F internal temperature. That will be about 40 minutes per pound at 300°F. Tip: Use an instant read thermometer to check it after 25 minutes per pound and then again every 5 minutes per pound after that.
For a 3-5 lb. roast, this will be 20-25 minutes per pound. (I actually take mine out at 135-140°F but that isn’t recommended to be safe. The 145°F temperature and the 20-25 minutes per pound are recommended to be safe and are the correct times and temperatures according to the the National Pork Board.
It takes a 2-pound pork loin roast about 40 to 60 minutes to cook to a safe internal temperature. A whole pork tenderloin, which is slightly leaner, might be done more quickly. The pork is safe to eat when it reaches an internal temp of 145 degrees.
Pre-heat oven to 325F (163C). Bake pork roast in the oven UNCOVERED for approximately 25-30 MINUTES *PER POUND*. Or until internal temperature reaches 155F (68C), rested to a final 160F (71C).
TIPS FOR A PERFECT PORK ROAST
For a crisp surface on your roast, be sure the oven is fully preheated before putting the roast in and don’t cover the meat while roasting. Searing (quickly browning at high heat) the outside of a pork roast before continuing with cooking is a great way to seal in flavor.

Cooking pork chops at 350 F will take 20 to 40 minutes, depending on the thickness of the chops, whether they are boneless or not, and whether they are covered with foil or not. What is this? Baking Your Pork Roast
The first way is to cover the pork roast with aluminum foil or your baking pan cover. Depending on your oven temperature, covering pork roast helps preserve its juicy flavors and also reduces shrinkage
Place your pork loin fat side up in your roasting pan. By having the fat on top, you’re allowing the fat layer to baste the roast as it cooks. This is the step that keeps the pork from becoming dry and tough! Cook the pork loin for 10 minutes in the 400-degree oven.
Before roasting, we always sear the pork on all sides first. After seasoning, throw it into a hot pan — we love our cast iron skillet for this. Sear all sides until they are golden brown. It’s okay if the pork is still raw in the middle.
In a small bowl mix together the garlic, salt, pepper and rosemary. Rub this all over the pork. Cook: Cook the pork for 45 to 60 minutes or until an instant-read thermometer inserted into the thickest part of the pork reads anywhere from 145 to 160 F degrees.
Cook the pork for 15 minutes at 425°F, then lower the oven to 375°F and continue cooking to an internal temperature of 145°F, about 75 more minutes. When done, it will be beautifully browned: Let it rest for 20 minutes before slicing and serving.
Regardless of the size of your roast, aim for cooking at 375 degrees F (190 degrees C), for 20 minutes per pound.
Cook the Tenderloin
This short cooking time is best for keeping the tenderloin moist — longer cooking times can dry out and toughen a tenderloin, White says. You’ll know your pork tenderloin is done when your meat thermometer shows an internal temperature of 140 to 145 F.
Preheat oven to 275 degrees F. If necessary, trim fat from top of pork, leaving a 1/8-inch thick layer of fat. Spread Roasted Garlic Rub all over pork and inside any cavities, concentrating on boned side. Put pork, fat side up, in a roasting pan and roast in middle of oven 6 to 8 hours.
When the time comes to put the roast into the pan, you’re always going to want to place the fat side up. This is so when the meat cooks, the fat melts off and drips down into the roast, infusing it with flavor.
What is the lowest temperature for slow cooking pork? A low temperature oven, 200°F to 325°F, is best for cooking large cuts of meat. It’s not technically a roast temperature, but it’s called a slow roast. The benefit of slow roasting an item is less moisture loss and a more tender finished product.
Place pork roast (fat side up) into large roasting pan with 1 cup water in the bottom. Bake for 4-5 hours or until desired tenderness. (I typically go 5 hours for pull apart pork roast) Add water as needed during cook time to prevent burning on the bottom of pan.
At 350 degrees, the pork shoulder should cook at a rate of 30-45 minutes per pound. That means an 8-pound cut should be done in 4 to 6 hours. Again, if you’re in a hurry, you can save time by dividing the roast in two.
Place pork in a shallow roasting pan. Bake at 300° for 4 hours and 15 minutes or until a thermometer inserted in center registers 190° and pork is very tender.
Turn the oven to 180°C and cook for 30-35 minutes per kg, depending on how well you like your roast cooked.
Foil-wrapped pork tenderloin is a great way to prepare this cut of meat to lock in flavor and moisture. Pork loin may not be as apt to dry out, but covering your pan with foil while roasting helps the meat retain its juiciness.
To tenderize pork before cooking it, try breaking up the tough muscle by hitting it with a meat mallet evenly across the surface of the meat. Then, if you want your pork to be extra tender, you can marinate it in a tenderizing marinade made with acids, like citrus juices, vinegar, or wine.
There’s no need to baste pork while it’s cooking as the fat should keep it moist, but some cooks like to brush the crackling with a little extra oil once or twice.
What Herbs Go Best with Pork? Pork is a very mild meat, like chicken, so it goes well with a wide variety of herbs and spices. The blend I used in this recipe is a classic mix of basil, thyme, and rosemary that can be used as an all-purpose meat seasoning (chicken, beef, anything).
Cook the pork loin for about 60-75 minutes for a 3lb. Use a meat thermometer to make sure the inside of the pork loin reaches an internal temperature of 145. Remove the pan from the oven. Transfer the pork to a clean cutting board and allow the meat to rest for 15 minutes.
Simply soak the pork loin in a saltwater bath for at least 2 hours. Or use your favorite marinade recipe. The marinade should have an acidic liquid like apple cider vinegar. This will help you avoid getting tough and dry pork.
