There is still flour on my chicken even when it’s cooked through. A very light coating of oil before you place your chicken in the fryer and midway through should get rid of all the flour. If a light coating of oil is not enough, then there is too much flour on the chicken.

What is dahl?

Dahl, daal or dhal, is an Indian dish, with the main ingredient being a specific type of lentil/ pulse that is split. When referring to a dahl recipe, this is in reference to the dish where the pulses (usually a split type of lentil) are cooked and broken down into a sort of stew/curry. It’s flavoured with spices and herbs and often paired with coconut milk.

What do you eat with dhal?

You can enjoy this red lentil dhal on it’s own, pair it with naan bread as I have, or serve with white or brown rice. Luckily if you don’t have any of the side dish options, it’s filling and flavoursome enough to enjoy on it’s own.

Easy Red Lentil Dahl with Coconut Milk

This red lentil dahl recipe is whipped up in under 30 minutes. It’s easy to make as it has minimal ingredients (but so much flavour)! The recipe is vegan thanks to the coconut milk.

Ingredients

White onions 

We go heavy on the onions in this recipe, with a fine dice to flavour the dahl without having the onion detectable in texture.

Red Lentils 

One of my fave staple ingredients. I use dried red lentils but you could reduce the cook time by using cooked/canned lentils. Be sure to reduce the stock though as the dried lentils absorb the stock as they cook.

Garlic 

Looooads of fresh garlic here. If you have to, you can use garlic granules (around 1.5 tsp). But fresh garlic is best here!

Ginger 

This ingredient is an absolute must! It adds a zing to the dahl which is one of the most flavourful elements of the dish.

Carrots

Carrots aren’t traditionally in dahl recipes, but I think it adds nutrients, volume and flavour. Plus a burst of colour. Make sure you thinly slice the carrots to ensure they’re perfectly soft/cooked for eating.

Chopped tomatoes 

You can sub the chopped tomatoes with tinned tomatoes or passata if you don’t have chopped.

Coconut milk 

The rich & creamy element to this dahl comes from the coconut milk. I’d recommend using full fat coconut milk as the dish is already low in calories, so we want to go with the more nutrient dense & flavourful coconut milk. We have the coconut milk to thank for this recipe being a creamy vegan red lentil dahl.

Coriander 

Adds brightness, flavour and texture. You could substitute it with mint or parsley.

HOW TO MAKE RED LENTIL DAHL

Since the lentils don’t require pre-soaking, they can go straight into the pan, so no much prepping is needed.All we need for this recipe: onion, garlic, split red lentils, sweet potatoes, spinach, coconut cream, water or stock, and spices. Quick, cheap, and definitely budget friendly.

  • peel and chop the onion, garlic and sweet potatoes
  • heat up the oil in a pan, add the chopped onion with salt and fry over a medium heat until translucent
  • add the chopped garlic and spices, and stir to release the fragrance
  • in go the red lentils and sweet potatoes, followed by the water/stock
  • place a lid on the pan and cook for 10 minutes or until the sweet potatoes begin to soften
  • add the bay leaves and coconut cream/milk, and cook for a further 5 minutes until the veggies are tender
  • add the frozen/fresh spinach, and check for seasoning – add more salt/pepper/spices if necessary
  • throw in some fresh parsley or coriander, then remove from the heat

And that’s it! Nothing more, nothing less. This dal is ready in well under 30 minutes, which means we can have hot food on the table even on the busiest days of the week.

NOTES AND TIPS

  • Add Greens: You can stir in a couple handfuls of fresh spinach at the end for added nutrition.
  • More Veggies: If you want to add additional veggies, I’d recommend adding diced carrots, cauliflower or bell peppers at the same time as the onions
  • HeatOmit or reduce the red pepper flakes if you’re sensitive to spice, or feel free to add a little more if you really want some kick! One diced jalapeno (deseeded) or cayenne pepper work as an alternative to red chili flakes.
  • Meal Prep: The flavours only improve the next day so this is a great dish to make in advance!
  • To make this recipe oil-free: Omit the coconut oil and saute the onion, garlic and ginger in water or broth.

EASY SWAPS

If you ask me, this red lentil dahl is delicious even without the addition of sweet potatoes and spinach. Just lentils, and nothing else, and you still have a fantastic recipe. But, of course, the more veggies, the better.

I always have frozen spinach around, and I love to throw some in pretty much any dish I make, plus it’s a great way to avoid waste – fresh spinach might not be used before it becomes sad, and I really don’t like throwing away good food.Kale could be a good substitution here, or just omit it if you don’t have any.

Sweet potatoes are deliciously sweet, and perfect in any kind of curry, good substitutions could be butternut squash or any other squash (pumpkin would be amazing if in season). Carrots would work well to. Or even regular potatoes, why not?!

If you don’t happen to have coconut cream, coconut milk works just fine (do use the canned one, rather than the thin, watery cartoon one). It can also be omitted, just add more stock if the dish is too thick.

Any other veggie can be thrown in, as long as it cook in pretty much the same time, everything goes. Do give it a go, you will love it!

Why this recipe works

I’ve simplified the spices to ensure that anyone can make this and grab the common spices they have in their cupboard.

It’s the best dahl for simple & easy meal prep. It’s perfect to warm up the cold nights & to get cosy. There’s also minimal cleaning as it’s all whipped up in one-pot.

Can I make this dish in advance?

Absolutely. The flavors only get better as it sits. You can make it any time during the week and reheat before serving. For this reason, it’s great for meal prep and batch cooking. Leftovers keep well in an airtight container in the fridge for up to a week.

You can freeze this meal for up to a year, but the coconut milk may separate slightly.

HOW TO SERVE LENTIL DAHL

Dahl is wonderful served on its own but it can also be served:

  • with fresh pita or naan bread
  • over jasmine, basmati or brown rice
  • over quinoa
  • with cooked veggies or a handful of fresh greens on the side
  • withbaked tofu, chickpeas or tempeh

I’ve felt inspired by watching how resourceful people have become since the start of lockdown.  It’s uplifting to see people deal with anxiety and isolation by finding new ways to connect and creative ways to spend their time .

I’ve watched businesses close overnight and the very next day transform to meet changing customer demands.  Pilates studios have become virtual; babies gather on zoom for story time; and independent food retailers are compiling food parcels and boxes with well thought out meal plans.

It’s the perfect demonstration of that popular quote from Tony Robbins: ‘its not resources but resourcefulness that ultimately makes the difference’.  In my own way I’ve had to find ways to adjust and reach new levels of flexibility and resourcefulness.  My biggest challenge being the exhaustion of looking after a baby 24/7 on my own.

Toddlerhood means Zahra’s little world has become very exciting and bedtime is not getting in the way of that.  So on those nights when all I’ve looked forward to bedtime, I accept that today I will not get a break. Instead I roll out my mat and practice some Pilates whilst she burns off some energy crawling all over me.

Becoming more resourceful in the kitchen has been my other big win.  In this time I’ve finally made hummus that tastes better than shop bought.  Pesto, almond milk and even coconut yoghurt have been whipped up when things have run out.

When fresh food is running low red lentil, coconut and tomato dahl has become my favourite ‘pantry meal’.  The onion and garlic are fresh, but as they store for a long time I tend to have those knocking around.

The rest of the ingredients are dry/tinned but still full of nutrition.  It’s pretty quick to make and just needs to simmer away on the stove.  This is another great batch cook recipe which freezes well and can be stored for a 2-3 months.  Serve it with rice or fresh rotis as these freeze well too.

Ingredients

  • 2 tbsp coconut oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 2 inch piece of ginger, finely chopped
  • 1 tbsp ground coriander
  • 1 tbsp ground cumin
  • 1 1/2 tsp ground tumeric
  • 1/2 tsp ground cinnamon
  • 1 red chilli, finely chopped or 1/2 tsp of chilli flakes
  • 160g red lentils, washed
  • 1 tin of coconut milk
  • 1/2 tin of chopped tomatoes or 2-3 tomatoes, chopped
  • 300ml water, more if needed
  • fresh coriander to serve

Instructions

  • Heat oil in a medium saucepan or dutch pot over a medium heat. Cook onion for around 8-10 mins until softened and golden brown
  • Add garlic, ginger, and spices and cook, stirring, until fragrant for about 2 minutes.  Add more oil if needed to prevent the spices drying out.
  • Add lentils and stir coating with spices
  • Add tinned tomatoes, 300ml water; and season with salt and pepper
  • Set aside ¼ tin coconut milk for serving and add remaining coconut milk to pan. Bring mixture to a boil; reduce heat and simmer gently, stirring occasionally, until lentils are soft, 20–25 minutes. Add more water if the dahl starts to get too thiick. Season more if needed.
  • Serve with roti or rice, fresh coriander and pour the remaining coconut milk into the bowls.

If you are anything like me, you will CRAVE comfort food the second the temperature drops. This one-pan chicken dinner will satisfy your tastebuds and minimise washing up – what’s not to love?

I can’t think of a more comforting recipe than this creamy chicken casserole… It has a short list of ingredients but is absolutely PACKED with flavour. That creamy sauce in particular is totally addicting, I don’t think I will ever tire of it.

Another thing I absolutely love is that everything cooks together in one pot – that’s always a winning formula. What’s more, unlike most casseroles which require a long and slow cooking time, this recipe is pretty speedy and ready in under an hour.

CHICKEN CASSEROLE INGREDIENTS

All the ingredients in this recipe are simply meant to be together: chicken, bacon and cream with Dijon mustard for flavour, English mustard for heat and a little honey for sweetness.

Shallots and baby potatoes round off the list of ingredients… and instead of stock I have used medium-dry apple cider. If you wanted to improvise a little, then mushrooms would be a lovely addition as would chestnuts or even some apples.

Any seasonal vegetables could be used instead or in addition to the baby potatoes – such as carrots, parsnips or butternut squash, though the cooking time might need slight adjusting.

Let’s not forget the herbs – I have used dried tarragon and fresh thyme. Chicken stew with tarragon and cream is a classic recipe that uses cider – use fresh tarragon with caution as it is a lot more aromatic and powerful than the dried version.

ALL ABOUT (HARD) CIDER

In Europe, cider is a sparkling drink made with apples – though there’s also versions made with pears or other fruit. Cider contains alcohol – usually about 5-7%. There’s lots of French and English cider brands to choose from, any medium-dry apple cider would be good in this recipe.

TOP TIP: The alcohol in the cider cooks off while you make this casserole recipe. But if you prefer not to use any, replace with chicken stock or perhaps half stock and half cloudy apple juice.

WHICH PAN SHOULD I USE?

You will need a large lidded casserole dish that can be used on the hob but is also oven safe. I used my new Chef’s Pan which I have fallen head over heels for. It can cook casseroles, but is also perfect for stir fries, one-pot pasta dishes, tagines… you name it. A great investment which comes with a lifetime guarantee.

CREAMY CHICKEN CASSEROLE STEP BY STEP

Take a look at this step by step tutorial – please note you will find the full recipe, including ingredients in the recipe card at the end of this post.

STEP 1. Pat your chicken legs dry using paper towels and season with salt and pepper. You can also use chicken thighs in this recipe.

STEP 2. Dry fry the smoked bacon lardons in a large non-stick pan until they start to crisp up and render some of their fat. Set aside on a kitchen towel lined bowl.

STEP 3. Add a splash of olive oil and small knob of butter to the pan and brown the chicken legs, in batches if necessary, for about 4 minutes per side or until nicely coloured. Set aside.

STEP 4. Add the chopped shallots and cook, stirring, for a couple of minutes. Add the potatoes and garlic and cook for a further four minutes.

STEP 5. Add the apple cider and stir in the mustard, honey and cream. Sprinkle with the dried tarragon.

STEP 6. Return the bacon and chicken to the pot, nestling the chicken in the creamy sauce. Add the thyme sprigs, cover and transfer to a preheated oven to cook for a further 15 minutes. Uncover the pot and cook for another 5 minutes or until the potatoes are fork tender. 

STEP 7. Check the seasoning, add the lemon zest and serve with some crusty bread to mop up the delicious sauce and a green salad on the side.

RECIPE TIPS AND TRICKS

Want to make sure you get this one-pot chicken recipe just right? Here’s some expert tips:

  • Make sure you use the best chicken you can find – organic and free-range if possible. Using skin-on and bone-in chicken adds more depth of flavour but you could use skinless chicken if you refer.
  • Do NOT rinse the chicken – though this used to be common practice it is now frowned upon as it can spread bacteria.
  • Chicken legs and chicken thighs are suitable for this casserole. I would avoid using chicken breasts which can become a little tough.
  • Don’t skip browning the chicken – it adds so much flavour and colour! Sear in a hot pan until they are golden – avoid overcrowding as it will cause it to steam instead of brown. Depending on the size of your pan you may need to do this in batches.
  • You can replace single (pouring) cream with half and half or half-fat creme fraiche. Reduce heat to a simmer before adding any dairy to avoid the cream splitting.
  • Substitute the apple cider with chicken stock (broth) or use half chicken stock and half apple juice plus 1 tablespoon apple cider vinegar.
  • Replace some or all of the potatoes with squash, carrots, parsnips or a combination of all these vegetables, cooking until fork tender.

For me the proof is always in the pudding, or in this case the fried chicken, so I set out to try the recipe for myself.

The first small batch I tried was a bit lacklustre because, like many, I mistook the abbreviation “Ts” as handwritten in the recipe to be teaspoons. The lack of depth of flavour revealed that the recipe definitely must have meant tablespoons.

One thing I noted from that discovery is that the total volume of herbs and spices is only a tablespoon shy of a whole 8 ounce cup. That’s an incredibly high ratio (2:1) of seasonings to flour in a fried chicken recipe.

Since the ingredients are pretty commonplace, I began to suspect that the high volume of herbs and spices was actually the real “secret” to the recipe.

A couple of days later with a fresh chicken at the ready, I whipped up another batch of the coating and heated up my deep fryer. The result this time was much more like the franchise produced version. The depth of flavour was definitely there but lacking punch.

KFC readily admits that it does add MSG into the mix so for my 3rd attempt, I decided to try a small amount added to the regular recipe.

I decided on 1 tablespoon (15 grams) to add to the mix which is less than a gram per piece of chicken. I found the flour and spice mixture sufficient to coat 2 whole chickens cut into 9 pieces each.

The verdict?

I’ve since had 8 people taste test this final version. They all agreed that it did indeed come very close to tasting like the chicken from a KFC franchise.

Spouse says it tastes more like KFC in the states than in Canada. It’s a distinction she has claimed for years, that the Canadian version is saltier.

I have no idea if they tweak the recipe for geographical taste. I actually doubt it, but Spouse remains steadfast in her belief.

Either way, I don’t think that KFC has anything to worry about. Fast food fried chicken is ultimately convenience food.

Nobody looking for a quick meal is going to forgo the KFC drive-thru to spend an hour or so at home making the alternative homemade version.

Still, if your curiosity persists, either the handwritten recipe from the Chicago Tribune article, or my tweak of adding a little MSG to it, will produce a very, very, tasty fried chicken.

March 28, 2019 UPDATE: We have continued to use this recipe many times since it was first posted to Rock Recipes. It is most often used for fried wings nowadays and the more I taste them the more I feel like this was the original recipe from back in the day.

Ingredients

  • 2 cups all purpose white flour
  • 2 tsp table salt
  • 1 1/2 tsp dried thyme
  • 1 1/2 tsp dried basil
  • 4 Tbsp paprika
  • 1 tsp dried oregano
  • 1 Tbsp celery salt
  • 2 Tbsp garlic salt
  • 1 Tbsp black pepper
  • 1 Tbsp dry mustard powder
  • 3 Tbsp white pepper
  • 1 Tbsp ground ginger
  • 1 Tbsp MSG, optional
  • 7 lbs chicken
  • oil for deep frying

Instructions

  1. Mix all of the herbs and spices together first, making sure there are no lumps in the mixture from spices that have clumped in storage.
  2. In a large bowl, add the herb & spice mixture to the flour and mix well until the spices are evenly distributed.
  3. Cut 2 whole chickens into 9 pieces each (2 drumsticks, 2 thighs, 2 wings, 2 side breasts and a centre breast)
  4. Dip each of the pieces in plain water, shake and dredge in the flour and spice mixture. Repeat for all of the remaining pieces. Leave the pieces to sit in the dredge for 10-15 minutes while the oil heats up. This will help the coating stick to the chicken better.
  5. Preheat a vegetable oil filled deep fryer to 340 degrees F
  6. Shake off the excess coating from the pieces and fry for up to 18 minutes for the largest pieces. Wings generally take 8-10 minutes, drumsticks about 12-15 minutes depending on size. I use a meat thermometer to test the pieces and remove them individually when they reach an internal temperature of 180 degrees F.
  7. Place cooked pieces on a rack that has been placed on top of a cookie sheet.
  8. Hold the cooked chicken in a 150 degree oven if you need to cook the chicken in multiple batches. In that Case I always start with the latest pieces and end with the smallest to minimize the time in the oven.

The flour and spice mixture I found to be sufficient for 2 whole chickens. If using only one, then spit the mixture in half and store one half in an airtight container until the next time you use it.

The original recipe in the article used fractions of tablespoons as measurement for some ingredients. I have converted those measurements to teaspoons in those cases, for ease of understanding and measuring.

NOTE If using MSG in the flour dredge you can cut the salt in the dredge by half if you like.

How to Make Air Fryer Steak

Ingredients

  • A 1-inch thick boneless ribeye or New York strip steak
  • 1 teaspoon olive oil
  • Kosher salt and freshly ground black pepper, to taste

Instructions

Step 1: Prep the steak

Start by rubbing the steak all over with the olive oil. This isn’t a necessary step when cooking a steak on the grill or in a cast-iron pan, but in an air fryer, the steak’s surface has the best chance of caramelizing and creating a crust if it’s coated in oil.

Sprinkle the steak generously with the kosher salt and pepper. Then, let the seasoned steak sit at room temperature for about 15 minutes to take the chill off.

 

Step 2: Preheat the air fryer

Some air fryers have a steak setting, but we don’t recommend using it. These settings don’t allow you to customize the cook time, and they might be calibrated for bone-in steaks, which take longer than boneless cuts. We like to preheat the air fryer on the regular setting to 400° F. Let the air fryer preheat for about three minutes before moving on.

Step 3: Cook the steak

Add the steak to the air fryer basket and cook it for about 7 to 9 minutes for a medium-rare steak or 10 to 14 minutes for medium, flipping the steak halfway through. When the steak is finished cooking, let it rest for 10 minutes before slicing and serving.

How to Make Flank Steak in the Air Fryer

It doesn’t get any easier than this! Air fryer flank steak sears up perfectly in minutes- with no mess!

  • Place Steak in Bag: First, place the flank steak in a gallon-sized sealable bag and set it aside.
  • Prepare Marinade: In a medium bowl, combine the rest of the ingredients listed and whisk until combined.
  • Add Marinade to Bag: Pour the marinade into the bag with the flank steak. Seal tightly removing any excess air. Store in the refrigerator and marinate for at least 20 minutes or as long as overnight.
  • The longer you can marinate the meat, the more flavorful and tender it will be. Turn the bag occasionally making sure it is marinating evenly on all sides.
  • Drain: When you are ready to air fry the meat, drain the steak from the marinade and discard the marinade.
  • Air Fry: Preheat the air fryer to 400° Farenheit. Add the steak to the preheated air fryer basket and cook for about 5-7 minutes on each side only flipping once. Cook time depends on the thickness of your steak. Cook until the internal temperature reads 140-145° Fahrenheit or 130° Farhenheit for medium-rare. Let rest 5 minutes before slicing.

CHIPOTLE CARNITAS (COPYCAT RECIPE)

This Chipotle carnitas recipe is a remake of the restaurant favorite that features pork roast slow cooked with a variety of spices until tender. An easy dish that works perfectly as a filling for enchiladas, burrito bowls, tacos and more!

I make Mexican food at least once a week because my whole family loves it. I often get requests for dishes such as traditional Mexican rice, flavorful chicken fajitas, and this melt-in-your-mouth tender Chipotle carnitas.

We often grab a quick lunch or dinner at Chipotle, but it can get expensive over time! I decided I needed to learn how to make some of our favorite menu items at home, such as this Chipotle carnitas. The end result is perfectly tender and flavorful pork with minimal effort.

WHAT IS IN CHIPOTLE CARNITAS?

The carnitas at Chipotle is pork that is slow cooked with seasonings including juniper berries, thyme and bay leaves. After the meat is cooked, it is shredded then ready to go into any number of Mexican style dishes.

INGREDIENTS

    • 1 tablespoon vegetable oil / 1 tablespoon kosher salt
  • 1 teaspoon black pepper
  • 4 pounds pork roast such as pork shoulder or pork butt
  • 1 cup chicken broth
  • 2 bay leaves / 2 teaspoons fresh thyme leaves
  • 2 teaspoons juniper berries

INSTRUCTIONS

    • Heat the oil in a large pot over medium high heat.
    • Season the pork roast with the salt and pepper.
    • Place the pork in the pot. Cook on both sides for 4-5 minutes or until golden brown.
    • Transfer the pork to a slow cooker. Add the chicken broth, bay leaves, thyme and juniper berries.
  • Cover and cook for 8 hours on low heat.
  • Uncover the slow cooker and discard the juniper berries and bay leaves.
  • Shred the pork in the slow cooker with two forks.
  • Serve as-is, or place the shredded pork on a sheet pan lined with cooking spray. Spoon 1/4 cup of the cooking liquid over the pork. Broil for 3-4 minutes or until the pork pieces have crispy edges.

TIPS FOR THE PERFECT DISH

  • The secret ingredient in this recipe is the juniper berries, which add a unique, herbaceous flavor. Juniper berries can be found in the herbs and spices aisle of most major grocery stores, and can also be ordered online.
  • It takes a few extra minutes to brown the meat before it goes into the slow cooker, but I really feel like it’s worth the effort to do this step. If you’re in a huge hurry, you can just put the meat in the slow cooker without browning it first, and that will also be fine.
  • This dish will stay fresh in the refrigerator for up to 4 days, and can be frozen for 2 months. I often make a double batch so that I have extra to go into the freezer.
  • Traditionally carnitas is served crispy, either from the shredded meat being finished in a hot pan or under the broiler. When I eat at Chipotle I find their meat has a softer consistency, so I’ve made the crisping step optional.
  • No slow cooker? This recipe can be made in the same way in an oven. Place the seared pork and the rest of the ingredients in a large covered pot, then bake at 325 degrees F for 4 hours or until the meat is tender.

Helpful Tips to make Chipotle Copycat Slow Cooker Pork Carnitas

  • Do not use non-stick pans for searing. Cast iron or stainless steel are great alternates to the dutch oven.
  • You can use bone-in or boneless pork but watch your cook time.
  • Searing the meat before placing it in the slow cooker adds another layer of flavor. While you could skip this step, I highly recommend taking the extra 15 minutes and doing it. Trust me the flavor is worth it!
  • If making this with fresh rosemary sprigs, I place them on the bottom of the slow cooker and put the pork roast on top.

  • Dutch oven – I love this set and use it all the time. It is perfect for roasts and I especially love it for my one-pot meals.
  • Slow Cooker – the slow cooker is almost my most used kitchen appliance, especially during fall/winter! It’s just so convenient, and let’s face it, it makes the comfort food taste even better!

History

The company was founded in 1993 by Steve Ellis, a classically trained chef. It started with an initial 16 restaurants all based in Colorado. Ellis’ concept was to create a fast food chain that focused on great quality ingredients that are grown or produced locally with a big emphasis on responsible farming and agriculture.

It was in 1998 that Chipotle’s received a big helping hand with massive investment from the McDonald’s Corporation; in fact, by 2001 they were the company’s biggest investor. With investment from such a major food giant, they expanded rapidly and the first location outside of Colorado was opened in 1998, in Kansas City, Missouri.

By the time McDonald’s divested in 2006, the company had grown to over 500 restaurants across a variety of locations.

Nowadays, Chipotle Mexican Grill is a global name, with restaurants spanning the USA, Canada, the UK, France and Germany. In 2013, they were registered to have over 1,900 locations with an estimated $327.4 million net income.

There are also two other key factors to mention when considering Chipotle’s. In 2010, they hired Nate Appleman to assist in developing new cuisine, he was voted as “Best New Chef” by Food and Wine magazine. Through the involvement of top quality chefs, the business has assured the great taste and quality of all the food served there.

Furthermore, in an effort to improve their high food standards even more, it was in 2013 that Chipotle decided to voluntarily disclose which food had GMOs in, something that has only been done by very few companies due to the controversy over the issue. How to Make Baked BBQ Drumsticks?

Homemade baked drumsticks are super easy to make with chicken drumsticks and a homemade barbecue sauce. You’ll find the full step-by-step recipe below, but here’s what you can expect:

Start by making the barbecue sauce, with ketchup, vinegar, water, brown sugar, butter, salt, Worcestershire sauce, dry mustard, and chili powder. Coat the drumsticks with the sauce, then bake them until the juices run clear and the chicken reaches an internal temperature of 165 degrees F.

  1. I like to cook the chicken on a metal rack over a baking sheet to allow even heat and continuous airflow on all sides. This helps prevent soggy skin. (Note that while the chicken picks up a nice “grilled” flavor from the broiler, the skin probably won’t get quite as crispy.)
  2. I usually make this recipe with chicken drumsticks, but you could also make it with a mix of drumsticks and thighs. For optimum baked BBQ chicken flavor, I recommend you stick with these dark meat cuts and avoid breast meat.

  1. Marinate the chicken:

    Set the chicken legs in a shallow dish and sprinkle both sides with salt. If you’re using liquid smoke, mix it into the barbecue sauce. Brush the legs all over with 1/4 cup of the barbecue sauce, reserving the rest.

    Cover, and set in fridge to marinate at least 30 minutes or as long as 8 hours.

  2. Prepare the chicken for cooking:

    Set the broiler to high with a rack positioned a few inches below. Line a baking sheet with aluminum foil and set a metal cooling rack (like the ones used for baking) inside (or use a broiler pan).

    Arrange the marinated chicken legs on the wire rack with a little space between each leg.

  3. Sear the chicken:

    Slide the pan under broiler, and broil chicken on one side until you begin to see dark brown charred spots, 5 to 7 minutes. Flip, and sear the second side until also browned, another 3 to 5 minutes or so.

  4. Preheat the oven and adjust the rack:

    Preheat the oven to 350°F and reposition the rack in the middle of the oven.

  5. Finish cooking the chicken:

    Brush chicken all over with all but a tablespoon of the remaining sauce. Slide into the oven and bake 15 minutes. Flip chicken, and brush with the remaining sauce anywhere it’s needed.

    Continue baking until the internal temperature of the chicken reaches 165°F when testing with a meat thermometer, another 15 to 20 minutes.

  6. Serve:

    Serve the chicken right away while hot with extra barbecue sauce on the side.
