You will need 2 cups of baby potatoes, rinsed and quartered
Approximately half a red bell pepper, sliced thinly
The yellow bell pepper should be
sliced into 1/2 inch pieces
A half of a green bell pepper, sliced thinly
Sliced and halved zucchini, with one half cut in half
A half of an onion, sliced thinly
Sliced smoked sausage, approximately 9 ounces (not ground sausage)
There are 3 tablespoons of olive oil in this recipe
It is optional to add 1/4 teaspoon of red pepper flakes to the recipe
The amount of garlic powder or minced garlic to be
used is 1/2 teaspoon
There is one tablespoon of Italian seasoning in the recipe
The amount of chicken broth should be 1/2 cup low-sodium
Freshly cracked pepper and salt to taste
Chunks of fresh parsley, chopped finely
Heat two tablespoons of olive oil over medium-high heat in a heavy bottomed pot (we like our cast-iron!). When the potatoes are ready, place them in the pot and season them with salt and pepper. Fry them until golden brown and cooked through for around 8-10 minutes, stirring occasionally. Remove the potatoes from the pot and set them aside.
I would recommend browning the sliced sausage in 1 tablespoon
of olive oil over medium high heat for around 5 minutes. Remove the sausage from the pot and set it aside before continuing with the recipe.
In the same pot, add the onion and garlic to
the remaining cooking oil and cook for 1 to 2 minutes. Add the bell peppers and zucchini to the same pot and season with red pepper flakes, Italian seasoning, salt and pepper. Cook for 2 minutes, stirring occasionally, until softened.
4. Once the sausage has
been
prepared, add the cooked potatoes and sausage back to the pot, mix everything together and then add the chicken broth. Cook for 5 minutes more, adjust the seasoning and garnish with finely chopped fresh parsley. Serve immediately.
