The easiest enchiladas you will ever make. Simply turn on your crockpot and forget all about it until you have the cheesiest, creamiest enchiladas ever! My slow cooker and I have become very good friends this fall season.
Put chicken breast in bottom of a slow cooker; pour blended enchilada sauce over the chicken. Cook on Low 8 to 9 hours (or 4 to 6 hours on High).
Cooking Instructions: Microwave Oven: Remove Enchilada tray from box. Leave Enchiladas wrapped in film and poke holes to ventilate. Place: Tray in microwave and heat on high for 3:30 to 4:30 min. Let sit 1 minute.
The most important tip for avoiding soggy enchiladas is to briefly fry your tortillas in hot oil before you fill and roll. This creates a little bit of a barrier so that the tortillas don’t soak up too much of the sauce and therefore start to break down.
Preheat the oven to 375 degrees and lightly spray an 8 x 8 or 9 x 9 – inch baking dish with cooking spray. Pour ¼ cup of enchilada sauce into the bottom of the pan. Next lay 10 tortilla quarters into the bottom of the pan followed by ⅓ of the chicken, and ½ cup of cheese. Repeat this process two more times.
Coat both sides of one tortilla with sauce mixture; place in a greased 9-in. pie plate. Top with a third of the chicken mixture and 1/4 cup cheese. Repeat layers twice.

How To Reheat Enchiladas
While some recipes use flour tortillas, corn tortillas are traditional and are the better option for enchiladas for good reason. Corn tortillas have a distinct flavor that plays a key part of the enchilada experience, compared to flour tortillas, which are more like a blank slate.
Mild and slightly salty, queso blanco is popular for cooking and snacking. It’s often used as a topping for enchiladas and empanadas or as a filling for chicken breasts, peppers, enchiladas and burritos.
Traditional enchiladas are made with less sauce but, because the tortillas are coated in sauce, it’s more evenly distributed throughout the dish. And, with less sauce, it’s less likely your tortillas will sog out and disintegrate.
All of the familiar elements of chicken enchiladas are there – chicken, cheese, tomatoes, onions, tortillas. But instead of rolling up the filling inside the tortillas, you layer all the ingredients, like a lasagna.
Place 2 tortillas in the bottom of the dish, overlapping to cover the entire surface. Layer the beans, chicken, cheese, sauce, and tortillas; repeat once to make a total of 2 layers. (For me this was about 1/3 cup refried beans, 1 cup of the chicken, ½ cup cheese, and about 3/4 cup enchilada sauce in each layer.)
Tortillas: Corn tortillas are traditionally used in Mexican-style enchiladas, but I typically use flour tortillas (which are more commonly used in Tex-Mex and American-style enchiladas) since they are much easier to roll. That said, just about any style of tortillas will work in this recipe.
All the flavors of traditional enchiladas are here, but no fussy filling and rolling is required. For a New Mexican-style enchilada dish, swap in ground turkey or ground chicken. To change this up a little, before baking sprinkle 1 cup coarsely crushed corn tortilla chips on top for some texture.
Assemble Enchiladas:
Coat the tortillas with the red enchilada sauce and place coated tortillas on a plate with a large slotted spoon. Layer a chile-coated tortilla with some shredded cheese and chopped onion. Put another coated tortilla on top and repeat the layers until you have a stack of 3 to 4 tortillas.
Another classic idea for what to serve with enchiladas: black beans and rice! This Latin-style side dish features black beans, jumbled with rice and green bell pepper, and seasoned with cumin, lime and cilantro. Cook your rice on the stovetop, or use the Instant Pot for a hands off method.
Spicy Mexican Street Corn Salad is a favorite dish to serve with enchiladas or fajitas! It’s great for a crowd because you can make it ahead of time and you can make it as spicy or as mild as you like.
My best choices would be, for a white, a light, refreshing pinot grigio, a chenin blanc, or a mildly oaked chardonnay. Or, for a red, something Spanish or Portuguese, or a juicy, unoaked syrah, malbec, merlot or zinfandel from Chile, the US or Argentina.

Remove enchilada tray from box. Leave enchiladas in tray and make a slit in the film. Microwave Oven: Place tray in microwave oven. Cook on high for 3:00 minutes.

How Long to Cook Frozen Enchiladas: Bake frozen enchiladas for 45-50 minutes at 350 degrees. Or let the chicken enchiladas thaw, then bake for 20-25 minutes. Remove the foil for the last 5-10 minutes.

It’s important to pre-cook the tortillas because not only does cooking them help soften them for rolling, cooking them in a little fat helps develop the flavor of the tortillas. As the tortillas brown a little, remove them to a plate.
Using Pre-Cooked Chicken: 4 cups of shredded roasted or boiled chicken can be used instead of the sauteed chicken. Using Canned Sauce: Use 2 cups of canned enchilada sauce. Make it Less Spicy: Reduce or omit dried chili pepper or chipotle pepper. Reduce canned chipotle chilis.
A rustic cut blend of 4 cheese is the best all-around cheese for enchiladas. Look for one that includes Montery Jack, Cheddar, Asadero and Queso Quesadilla Cheese. Avoid using all cheddar as it can be too oily. Colby-Jack cheese is a good substitution as well.
Step 5: Bake Enchiladas and Serve
Most enchiladas are baked covered with foil until heated through. Oven temperatures and baking times vary per recipe, but on average they cook in a 350°F oven for about 25 minutes. Sprinkle the cheese on top of the enchiladas after they are heated through.
Queso Asadero
Queso Asadero – This type of cheese is known for its melty consistency when warmed, which makes it the perfect addition to any Mexican cheese blend. It’s actually the only authentically Mexican cheese in the mix.
Bake for 15-20 minutes, until the cheese is melted and bubbly. Cool to room temperature. Store the enchiladas: To keep the enchiladas up to 2 days in the refrigerator, tightly cover the pan with foil before storing.

To make ahead, prepare the green enchiladas according to directions, cover tightly with plastic wrap or foil and refrigerate for up to 24 hours.
Wrap a stack of tortillas in damp paper towels or a damp kitchen towel, then wrap in plastic wrap or place in a microwave-safe resealable plastic bag (keep the bag open to vent). Microwave until warm and flexible, about 1 minute.
Place 2 to 3 tablespoons of cheese or your filling of choice down the middle. If you’ve used a chicken or beef filling, top that with shredded cheese. Fold one side over, then the other side. Turn the enchilada over, seam side down, so the tortilla stays closed, and place it in the baking dish.
