Easy Strawberry Cake with Jello

This amazing and easy Strawberry Cake is made with a strawberry cake mix, shredded coconut, pecans, and a bit of strawberry Jello for color.

The cake is topped with strawberry cream cheese icing and could not be more delicious. It tastes just like an Italian cream cake, only strawberry flavored!

What Kind of Strawberry is Used to Make Desserts?

It’s summer, so there’s nothing beating fresh strawberries! You can find bushels of them at your local picking farms, at farmers’ markets and in every grocery store in America. These little red gems are bursting with sweet flavor and prime for picking!

If you’re trying to make a strawberry dessert during any other season besides summer, it’s completely fine to use frozen strawberries—especially for any kind of blended treat.

As for the best, sweetest berries, everyone has their favorites but you really can’t beat Harry’s Berries. “The sweetest berries” as they’re referred to come from a farm in Oxnard, California where specialty varieties of strawberries such as seascape, luscious chandler and Mara des Bois are grown.

How to Do Strawberry Topping for Desserts

For beautiful strawberry cakes, pies and trifles, you can just slice fresh strawberries and use them to top these confections. Or, if you have mini berries on hand, keep them whole for a rustic look. As for any kind of strawberry crumble or crumb bars, strawberry jam and marmalade is usually mixed with a sweet crunchy crumble topping and most often, layered somewhere inside. Strawberry glazes or frosting is another nice touch for fancified strawberry desserts.

Tools to Make This Cake

  • Stand Mixer: A hand mixer will work, but I always find it easier to make frostings with a stand mixer.
  • Beater Blade with Scraper: The best invention ever!
  • 9” Round Cake Pan: These are my favorite pans!
  • Straight Icing Spatula: The long straight spatula makes it easy to smooth frosting.
  • Wire Cooling Racks: This will help your cakes cool more quickly.

Strawberry Cake With Jello Ingredients + Notes

Cake:
  • White cake mix | Regular white cake mix. (15.25 oz box)
  • Strawberry Jello | You want to use regular strawberry jello (not sugar free) in the smaller 3 oz. box (the one that serves 4.) You can mix up the flavor of jello as well to change up the flavor of the cake. Lemon for lemon cake, orange for orange cake, etc…
  • Chopped strawberries | Fresh strawberries work best, however, frozen can be used. If using frozen, I suggest adding the berries to a fine-mesh sieve and pressing the excess liquid out with a spatula.
  • Oil | Neutral tasting oil (like vegetable oil) works best in this strawberry cake recipe. 
  • Milk | Either low fat or whole milk works fine in this recipe.
  • Eggs | (Large) Eggs are important in this cake as they add structure and flavor to the cake.
  • Sweetened coconut flakes | Sweetened coconut flakes are moister and sweeter than unsweetened flakes. The sweetened version works best in baking.
  • Pecans | Natural/ unsalted pecans. You can chop them by hand or purchase pecan pieces. 
Cream Cheese Frosting: 
  • Cream cheese | You want full-fat cream cheese. Make sure it is in block form and not the whipped version sold in a tub. The cream cheese needs to be at room temperature.
  • Butter | Butter should be softened, but not melted. I prefer using salted butter in my frosting, however, if you only have unsalted, just add a pinch of salt when mixing
  • Confectioners sugar |
  • Chopped strawberries | I recommend using fresh strawberries in the frosting. Frozen berries have too much moisture and could lead to a runny frosting.
  • Sweetened shredded coconut | 

How To Make Strawberry Cake With Jello

  1. Preheat oven to 350.
  2. Lightly grease and flour 2 – 9 inch cake pans.
  3. Gently mash 1 cup of chopped strawberries.
  4. Add the cake mix, jello, oil, milk, eggs, and strawberries into a large mixing bowl. Blend with an electric mixer for 2 minutes. Fold in the coconut and pecans.
  5. Divide the cake mix into the two prepared pans. Bake the cakes for 28 to 30 minutes until they start to turn golden brown, pull away from the sides, and a toothpick inserted in the center comes out clean.
  6. Cool cakes in pans on a wire cooling rack for 10 minutes. Run a knife around the edges of the pan to loosen the cake. Remove the cakes from the pan and allow them to cool completely on the wire rack.) Make sure the cakes are cooling right side up to avoid cracking.
  7. Prepare the frosting while the cakes are cooling: Gently mash remaining strawberries and discard the liquid.
  8. Beat cream cheese and butter together in a medium bowl with an electric mixer. Slowly add the sugar to the bowl and continue mixing on low.
  9. Add strawberries and beat the frosting for another minute, fold in coconut. Set aside in the fridge.
  10. To assemble the cake, place the 1st layer on a serving tray, right side up. Top with frosting. Add 2nd cake layer on top of frosting layer. frost the top and sides of the cake.
  11. Store in the fridge until ready to serve.

Recipe Tips

  • Completely cool the strawberry cake layers before frosting.
  • Frosting must stay in the fridge until ready to use. If the frosting seems a bit runny, you can mix in a bit more confectioners sugar to stiffen it up.
  • Store the strawberry cake in the fridge until ready to serve.

Years ago our friend Sarah gave us her family recipe for Lemon Jello Cake(I know you’re supposed to write, Jell-O, but no one actually follows that rule, right??) and it’s been one of the most popular recipes on our site year after year. We’ve experimented with Pineapple Crush Jello cake, strawberry lemonade jello cakeand now a strawberries and cream jello cake!

 

That’s not the last of it either, we’ve got a few exciting new recipes headed you’re way that are also adaptations of a jello cake.

It’s important to use a white cake mix and strawberry jello for this recipe as it will tone down the strawberry flavor and allow you to taste that “strawberries n creme” thing.

When you’re making the glaze you should know that you have a few different options.

How to Make Jello Cake Frosting

Jello cakes are a little different than a classic, so you’ll need to know how to make jello cake frosting which is really just a simple glaze. Our Strawberries and Cream Jello Cake recipe calls for heavy cream so that it’s a creamier glaze, but milk would work to make a glaze and in fact, water would totally work as well though remember that it will get thin even faster.

No matter what kind of liquid you use it will be a matter of watching it to make sure that it ends up runny but not so thin it’s like a simple syrup. You want the glaze to be slow but runny when you hold up your whisk with the glaze on it so that it won’t seep into the cake too quickly.

How to Make Strawberry Jello Cake

You can make strawberry jello cake a few different ways. You can use a white, lemon or strawberry cake mix and then the jello flavor depends on what overall flavor you want. For our Strawberry Lemonade Jello Cake we chose lemon jello to really emphasize the lemonade bright flavor. You could totally do a strawberry cake with strawberry jello as well and it’s not too much, I promise. My current favorite though is our Strawberries and Cream Jello Cake which is the recipe below. It’s a perfect balance.

Ingredients

  • 1 cake mix white
  • 4 eggs large
  • 1 1/3 cup water
  • 2/3 cup oil
  • 1 package strawberry jello small box-3 oz

ICING

  • 4 Tablespoons heavy cream or more
  • 1 1/2 cup powdered sugar

Instructions

  • Preheat the oven to 350 degrees.
  • Spray a cake pan with nonstick spray and sprinkle with flour. Tip and tap the edges of the cake pan to coat it with flour.
  • In the bowl of a mixer, mix the cake mix, eggs, water, oil and jello together.
  • Pour into greased and floured 9×13 pan.
  • Bake at 350 for 27-30 minutes.
  • When cake is done, prick with 2 tined fork while still hot.
  • Immediately pour cream icing over top.

ICING

In a small bowl, mix the heavy cream and powdered sugar until smooth, but runny.

Notes

May be frozen for up to 3 months, when wrapped well in plastic wrap and foil.  Add whipped cream just before serving.
