Ingredients

  • 4 boneless pork chops at least 1 inch thick
  • 1 tablespoon olive oil
  • 1 teaspoon yellow mustard
  • 1 tablespoon brown sugar
  • 1 teaspoon ground paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions

  • Prep: Heat oven to 400°F and line a rimmed baking sheet with baking parchment.
  • Tenderize: Place pork chops between two pieces of plastic wrap and very gently pound using a rolling pin or flat side of a meat mallet (you don’t want to flatten them much, you mainly want to tenderize them – 4-5 gentle smacks will do).
  • Season: Rub chops all over with oil and mustard. Combine brown sugar, ground paprika, garlic powder, onion powder, salt and pepper in a small bowl. Rub seasoning blend all over chops.
  • Bake: Bake for 12-15 minutes, depending on thickness of chops (about 6 minutes per ½ inch thickness), until they reach an internal temperature of 140°F. Turn oven to broil and broil the pork chops 1-2 minutes, until browned.
  • Rest: Remove from the oven and allow chops to rest in the pan for 5 minutes before serving, in order to let temperature rise to 145°F. Do not skip rest!

  • 1 teaspoon paprika sweet or smoked
  • 1 teaspoon kosher salt
  • 20-25 cranks fresh-ground black pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon oregano
  • olive oil

Instructions

  • Preheat oven to 400 degrees F.
  • In a small bowl, combine paprika, salt, pepper, onion powder, garlic powder, and oregano. Drizzle in 2 tablespoons olive oil and stir into a thin paste.
  • Pat pork chops dry with a paper towel, then coat them on all sides with the seasoning mixture.
  • Place a cast-iron skillet on the stovetop over high heat. When hot, drizzle in just enough olive oil to thinly coat the bottom. Add the pork chops, working in two batches if needed to avoid crowding. Cook for 2 minutes without moving the chops, then flip and cook for 2 minutes more on the other side. They should be golden brown and may have a few spots of charring – that’s good!
  • Transfer the skillet directly into the hot oven and bake for 7-10 minutes, just until the pork chops reach an internal temperature of 145 degrees F.
  • Transfer pork chops to a cutting board or serving plate, tent with foil, and let rest for 3 minutes before serving. Enjoy!

INGREDIENTS

  • 2 tbsp olive oil
  • 1 tbsp garlic powder
  • 3 tbsp lemon juice, divided
  • 4 pork chops, 1/2″ thick boneless chops – NOT extra thick or super thin
  • 1 tsp celtic sea salt

  • 10 cloves garlic, minced
  • 1 tbsp parsley, fresh cut, to garnish

  2. Preheat oven to 375 degrees F.
  3. Pat pork chops with paper towel to completely dry from any moisture from marinade.
  4. Season generously with salt and pepper.
  5. Heat a heavy cast iron pan (or oven-safe heavy pan) on medium high until very hot.
  6. Add butter or olive oil until melted and foamy or light and shimmery.
  7. Add in pork chops, without crowding the pan.
  8. Cook until browned on one side – about 3 minutes.
  9. Add garlic, lemon slices, lemon juice to pan as you sear the other side.
  10. As pork chops brown on the other side, stir garlic slightly and ladle butter/oil, lemon juice, and garlic from pan over the pork.
  11. When chops are browned on both sides, transfer to oven and cook until internal temperature reaches 145-150 degrees, about 25 minutes for a thick pork chop.
  12. For thin pork chops, only 5-10 minutes in oven might be needed. Use thermometer to gauge how close your pork is to being fully cooked since chops can vary so much!
  13. If you go by the older guidelines, it used to be 160 degrees, but the USDA now says 145 is good. Note that pork can still sometimes look a touch pink even when fully cooked, so go by the temperature.
  14. Let rest 5 minutes before serving.

What Seasonings Are Best for Pork Chops?

Similar to chicken breast, pork is mild in flavor, so you have lots of options for adding flavor. Here are a few suggestions:

  • Keep it simple and use salt, pepper, a fresh herb like thyme, and lemon wedges scattered around the pan. This is what we’ve done in our photos, and the recipe shared below.
  • For chili powder based seasoning, we love using a combination of ancho or our homemade chili powder, garlic powder, onion powder, smoked paprika, and black pepper. Combine one teaspoon of everything listed, except use only 1/2 teaspoon of smoked paprika and 1/2 teaspoon of black pepper. (We used this blend in our skillet pork chops recipe.)
  • We love using a blend of brown sugar, grated lemon zest, and smoked paprika for a sweet citrus rub. Use one tablespoon brown sugar, one teaspoon lemon zest, and 1/2 teaspoon smoked paprika. (We use this blend to make our brown sugar baked salmon.)
  • A combination of fresh herbs, Dijon mustard, and lemon is classic. (Take a look at our lemon baked chicken thighs or our baked pork tenderloin recipe for inspiration.)
  • Italian seasoning, Za’atar seasoning, and taco seasoning are also excellent. (Here’s our homemade taco seasoning blend.)

How Do I Make Baked Pork Chops?

The first step is to sear your pork chops before baking. I do this in my cast iron skillet and then transfer the entire skillet into the oven. This locks in the flavor of the pork chops while baking them. You do not need to sear them, but I highly recommend it. If you sear them it will impact your cooking time. A general rule for baking pork chops is 7 minutes of baking in a 400 degree oven per half inch of meat. Since we are searing them you reduce that amount by two minutes. Now, if you are using a bone-in pork chop, you might need to add a few minutes of cooking time. Your pork chops will be done when they reach 145 degrees F. Also, please remember to let your pork rest for 5-10 minutes before cutting it.

How Do I Cook Pork Chops Without Drying Them Out?

This sear and bake method is a great way to keep pork chops from drying out. But, why sear pork chops before baking? Because searing the pork chops helps build a beautiful golden crust as well as helping lock in the moisture for when it bakes in the oven.

Also, due to ovens sometimes not being accurate or our pork chops being different sizes, the best way to cook pork chops without drying them is by not overcooking them. Use a meat thermometer and stop cooking them once they’ve reached an internal temperature of 145ºF at the thickest point.

How Long Should I Cook Pork Chops in the Oven?

The cook time for baked pork chops will vary depending on how thick your chops are. That said, they won’t need very long in the oven.

For example, boneless pork chops about 1-inch thick will need a 2 to 3 minute sear in the skillet and then 8 to 15 minutes of bake time in the oven.

Thinner chops will cook much quicker, and thicker (or bone-in) chops may take a few minutes longer — a temperature thermometer is your best bet for checking doneness.

Pork is done when the internal temperature reaches 145 degrees Fahrenheit.

If you do not have a thermometer, you will know they are done if the juices run clear when cutting into the chops.

Can I Freeze Cooked Pork Chops?

You can freeze cooked pork chops. Once these easy baked pork chops have cooled to room temperature, transfer the pork chop along with any liquids (the garlic butter sauce) into a freezer-safe container or bag. Freeze for up to 3 months.

When ready to enjoy, thaw it in the fridge overnight and then reheat as instructed up above. They are great as leftovers. Store any leftovers in an airtight container in the fridge for up to four days. You can serve them with these side dishes: roasted potatoes, carrots, Brussels sprouts or a side salad.
