First, Make the Stock
We first make the stock and later add the raw chicken meat to cook near the end of the soup-making process. You could also cook the breast and thigh chicken pieces whole, in the broth, and remove them after 15 minutes of cooking or so, cool them and shred them to be added at service.
Typically, egg noodles are best for noodle soup, and are made with egg and flour, which are not particularly flavorsome ingredients. However, some will include salt, which can flavor your soup. The best source of flavor for soup is seasoning.
So if you use regular dried pasta in a recipe calling for egg pasta, add about 30 percent as much water as the recipe calls for, and increase from there to achieve the right sauce consistency.
Chicken (of course), along with carrots, celery, onions, noodles, and fresh herbs are slow-cooked to savory goodness. A whole chicken makes a flavorful stock and tender meat for the soup.
→ Follow this tip: If you plan on freezing leftover soup, don’t add the noodles just yet. Instead, wait to add noodles until you take the soup from the freezer and reheat it. Not only will you avoid sad, mushy noodles, they’ll also taste more fresh.
ANSWER: Waxy potatoes or those called boiling potatoes stand up well in soups and stews. These have thin skin and are high in moisture and low in starch. Potatoes that are low-starch and high-moisture hold together better. Yukon Gold potatoes are on the medium-starch side and will hold their shape in soups.

Can you overcook chicken in the slow cooker? Yes, it is possible! If the meat is cooked too long it could end up dry and not juicy and tender. The recommended times in my recipe are ideal for juicy results, but if you use less chicken than the recipe calls for I would recommend checking it sooner.
It can be nice to cook the onions beforehand, as the flavour is different to when you put them in raw, but experiment both ways as you may find you prefer one. It can also be good to brown meat to give it some colour, but again, this is not essential.
Simmer Your Bones Long Enough, But Not Too Long
Yet, if you cook your broth too long, it will develop overcooked, off-flavors that can become particularly unpleasant if you’ve added vegetables to the broth pot which tend to break down, tasting at once bitter and overly sweet.
This gives stock a thicker, more gelatinous consistency than broth. Because it’s made with bones and cartilage, not meat, stock is cooked for much longer than broth, typically for at least 6–8 hours.
The main difference between bouillon and stock is that bouillon is made by simmering meat, whereas stock is made by simmering bones. Also, stock is generally unseasoned or only lightly seasoned, while bouillon is seasoned to give it a strong flavor.
Boil the water (with salt and/or olive oil) in a large pan. Once boiling add the pasta and cook for 8-12 mins, depending on the shape – see above. Drain and leave to steam dry for a few mins, just until the surface of the pasta looks matte.
