This recipe is started off on a stove top, searing the meat to lock in juices. Then it is finished off in the oven where the apples and onions caramelize to perfection!

Preheat oven to 375F and season the pork tenderloin with salt and pepper.
Chop the apples and onions into large slices and set aside. Prepare the glaze by mixing all of the ingredients in a small bowl. Set aside.
Heat a large cast iron skillet over medium-high heat. Add olive oil and place the seasoned pork tenderloin into the center. Sear the tenderloin on all sides to get a nice golden brown colour. (Do not cook the tenderloin all the way through as it will finish off in the oven.) Remove the pork tenderloin from the pan and set it aside.
Add butter to the skillet. Place the apples and onions in the skillet and sprinkle with thyme. Cook until they begin to soften. Remove from heat.
Place the pork tenderloin on top of the apples and onions in the skillet. Pour the glaze over the tenderloin.
Place the skillet in the oven and cook for 25 minutes or until the tenderloin is cooked through. Remove from oven and let the pork tenderloin rest for 5 minutes before slicing.
Makes 4 servings
Preheat oven to 450°F. Season pork with salt and pepper.
Heat 2 tablespoons oil in large nonstick ovenproof skillet over medium-high heat. Add pork and sear until all sides are brown, turning occasionally, about 5 minutes. Transfer pork to plate. Cool slightly. Spread mustard over top and sides of pork; press fennel seeds into mustard. Add remaining 1 tablespoon oil to skillet. Add onion slices and apples; sauté over medium heat until golden, about 5 minutes. Spread evenly in skillet and sprinkle with salt and pepper. Place pork atop apple-onion mixture.
Transfer skillet to oven and roast until apple-onion mixture is soft and brown and meat thermometer inserted into center of pork registers 150°F, about 15 minutes. Transfer pork to platter and tent with foil. Let stand 5 minutes.
Meanwhile, pour white wine over apple-onion mixture in skillet. Stir mixture over high heat until slightly reduced, about 2 minutes. Cut pork on diagonal into 1/2-inch-thick slices. Spoon apple-onion mixture onto plates. Top with pork and serve.
We cook our pork — wether we are making tenderloin or pork chops — until an internal thermometer inserted into the thickest part registers between 145 and 150 degrees F (63 and 65 degrees C).
That guarantees that the pork will be juicy inside. It also means the meat will be slightly pink in the middle, which we don’t mind at all. If you’re not a fan of the pink, cook a little longer, but be careful not to overdo it.
