To make the best chicken thighs in a slow cooker, all you need to do is place chicken thighs directly into the cooker, season with salt, and cover with a lid. As the slow cooker heats up, the fat from the skin renders and falls down over the chicken. The chicken literally cooks in it’s own juices and fat.
Season and place the thighs in a baking dish, Mix the honey, soy sauce, and garlic together and pour over the chicken to coat them. Sprinkle with the red pepper flakes if using. Cover with foil and bake til the chicken is fully cooked through.

In a large skillet over medium-high heat, heat oil. Season chicken thighs with salt and pepper and sear until golden, 3 minutes per side. Transfer to slow cooker.
Totally up to you. While chicken is meant to be slow cooked from raw, many do like to just brown or sear it first. This can help to lock in moisture, speed up cooking time or simply to improve visual appearance of the finished dish. Keep in mind that chicken will release a lot of liquid during cooking.

So why is cooking frozen chicken unsafe? According to the slow cooker and food safety guidelines from the USDA’s Food Safety and Inspection Service, it’s imperative to “always thaw meat or poultry before putting it into a slow cooker.” If this is news to you, you’re not alone.
Cooking frozen meat in a slow cooker
It is not recommended to cook frozen cuts of meat in a slow cooker as it takes a long time for the meat to reach cooking temperature. This increases the chance of food-borne illnesses. It is alway recommended to defrost meat in the fridge before cooking it in the slow cooker.
Always cook your boneless skinless chicken breasts on LOW for the best results. I do not recommend cooking boneless chicken breast on HIGH, as it will become very dry, even if you check it early.
Can you overcook chicken in the slow cooker? Yes, it is possible! If the meat is cooked too long it could end up dry and not juicy and tender. The recommended times in my recipe are ideal for juicy results, but if you use less chicken than the recipe calls for I would recommend checking it sooner.
In a small bowl, mix together the honey, mustard, garlic and the lemon zest and juice. Pour the marinade over the chicken thighs and season. Put the chicken, skin-side up, on a large baking tray, then dot the new potatoes in between them. Drizzle the oil over the potatoes and sprinkle with sea salt.
Saute garlic with remaining 1/2 Tbsp oil for about 10 seconds. Carefully pour in chicken broth and thyme, then let simmer until reduced by half, about 2 minutes. Pour in honey mustard mixture, then whisk in cornstarch mixture. Let sauce cook until thickened, while stirring, about 30 seconds.

Ground meat should always be browned and drained before going into the slow cooker. Otherwise, it may clump and add grease to the dish.
Place vegetables in the bottom of the slow cooker. Add just enough broth to cover vegetables. Season vegetables to taste and sprinkle on minced garlic. Place raw chicken on top of vegetables, season to taste, and sprinkle with paprika.
You do not need to add any liquid. Chickens today typically have some solution added, so they rarely need added liquid. At the end of the cooking time, the meat will be tender, practically falling off the bone.
Raw chicken, just cooked on a low setting, will usually cook in 4-6 hours if you haven’t overfilled your slow cooker with ingredients. The more sauce in the pot and the fewer pieces of chicken, the shorter time’s needed.
Pour oil in a large skillet and bring to temperature over medium heat. Cook chicken in the oil , 4-5 minutes on each side, until crispy on the outside and cooked through in the middle. Toss chicken in the honey garlic sauce, coating all sides very well. Serve immediately.
Cornstarch! Cornstarch is a great thickening agent for any sauce. Make sure to mix the cornstarch with a liquid BEFORE adding it to the sauce though.

Serving honey garlic chicken with a side of rice, spaghetti, or mashed potatoes is a common practice. However, it can also be served with vegetables such as green beans and broccoli.
Bake boneless skinless thighs at 425°F (or 220°C) for 20-25 minutes, turning them twice while baking to ensure they stay juicy while baking. Lastly, broil under high heat to get charred edges for 5 minutes. Baked chicken thighs should have an internal reading of 165°F (or 70°C).
Carrots and broccoli are perfect both firm vegetables that can stand up to roasting in a hot oven. I used baby carrots to go with my honey garlic chicken because they are just a little sweeter. Slice them in half lengthwise so they cook through within the 15 minutes it takes the chicken to bake.

Place the chicken and stock, broth, or water in a 4-quart or larger slow cooker. Cook the chicken. Cover and cook until the chicken is tender and registers an internal temperature of 165°F, 4 to 5 hours on the LOW setting, or 2 to 3 hours on the HIGH setting.
