Air fryer sweet potato fries are 100 percent crispy, flavorful, and low in fat. This method works so much better than baking to achieve crispy, crunchy results with a nice creamy center.
Cornstarch is added to the seasonings the potatoes are tossed with, which helps the fries crisp perfectly without deep-frying. Storing them in the fridge overnight after cutting them helps to dry them, out, too, but this recipe will still work without that step. Just be sure to pat them dry of as much moisture as possible moisture.
This is a great small-batch recipe and makes enough for two to four people. If you are looking for a larger quantity, you can easily double the recipe and if you happen to have any left over, these fries also reheat extremely well. If you like to batch cook, you can freeze them and then air fry again when you are ready to eat. Serve these fries with your favorite sandwich, burger, or even a steak.
There are 2 key steps to making crispy, rather than soggy, frozen sweet potato fries in the air fryer:
Preheat the air fryer to 400 degrees F (200 degrees C).
Combine sweet potato fries and canola oil in a bowl and mix. Season with salt, pepper, garlic powder, and paprika. Mix until all fries are evenly coated.
Divide sweet potatoes into 2 or 3 batches for cooking. Place an even layer of sweet potatoes in the fry basket, insert in the air fryer, and cook until golden, about 10 minutes. Repeat with remaining sweet potatoes.
1 serving: 243 calories, 7g fat (1g saturated fat), 0 cholesterol, 498mg sodium, 43g carbohydrate (17g sugars, 5g fiber), 3g protein.
Start with two medium size sweet potatoes and try to look for ones that are not too long. This way you can use the full length of the sweet potatoes as the length of the fry. Remember that these air fryer sweet potato fries will shrink after cooking, so look for a shape slightly longer than the ideal fry length.
Next, peel the sweet potatoes, and cut off the skinny ends. You can save those for a different recipe. Then cut the sweet potatoes in half lengthwise. This will make it easier to lay them flat on the a cutting board and start cutting into long slices.
The thinner you cut them, the more crispy they will be. I recommend that you cut them 1/4-inch to 1/2-inch thickness.
We think this recipe uses the best method for fully-cooked, crispy sweet potato fries. Air fry the sweet potato fries (in a single layer) for 10 minutes to achieve golden brown fries. You can toss the basket after 5 minutes to ensure even cooking on all sides.

There are two things that can combat soggy sweet potato fries in the air fryer. First, remove as much moisture from the surface of the potatoes as possible. A quick pat all over the cut potatoes with a paper towel can help with that. Second, leave adequate space between each of the fries while air frying.
We worked with The Pioneer Woman 6.3-quart air fryer to develop this recipe. We found that cooking 1 1/2-pounds of sweet potato fries in two batches yielded crispy results. If your air fryer is smaller than 6.3-quarts, we recommend dividing this amount of potatoes into three batches.
The answer is no! Sweet potatoes are not as starchy as russet potatoes, which yield best results when soaked in water before cooking to remove the starch from the surface area and cook to a crisp. Soaking sweet potato fries could produce steam in the air fryer, which could make the fries soggy.
This is entirely up to you! The skin of the sweet potato holds a lot of nutrients and can certainly provide more texture in each bite. If you don’t like the way it tastes or the texture, then by all means, peel the skin off. Or, if you’re on the fence, peel the skin in alternating strips—it’s your call!
Place the air fried and cooled fries on a sheet pan and place in the freezer. Freeze for 1 to 2 hours or until frozen solid. Then place them in a freezer bag and store in the freezer for up to 4 months. You can pop them right back in the air fryer for 6 to 8 minutes at 400 F to re-crisp them.
