The whole spices in massaman curry paste are:
cardamom pods, whole clove, cinnamon stick, coriander seed, cumin seed, whole peppercorn, and dried thai chiles
(in a pinch the Indian dried chiles work as well).
Panang curry is a variant of red curry that is less spicy, thick(when compared with other red curries), but richer, creamier, with coconutty undertones. Massaman curry is a variant of yellow curry that is mild, rich, aromatic with a tangy taste and thick texture.
It originated in the south of Thailand near the border of Malaysia and is a thick sauce with a mild, slightly sweet flavor. Massaman curry dishes distinguish themselves by the inclusion of several whole spices and peanuts, otherwise uncommon in a Thai curry.
Thai red and green curry pastes can be used interchangeably. The flavour profile and intensity will be different but not necessarily in a bad way. Other Thai / Malaysian curry pastes such as, yellow curry, laksa or Massaman also work well as substitutes.
Massaman Curry is mild in heat and loaded with spices found in Indian cuisine like cinnamon and cardamom. Yellow Curry draws on turmeric and dried curry for a rich, savory flavor and yellow color. Panang Curry has the nutty, mellow flavor and texture of roasted peanuts ground right into the curry paste.
Massaman curry is a type of yellow curry but isn’t exactly the same as Thai yellow curry. The paste used in Massaman curry starts off as Thai yellow curry paste but extra, sweeter spices are mixed into this to create the Massaman flavour.

The origins of Massaman
The dish is thought to have originated in neighbouring Malaysia and was introduced to Thailand in the 17th century from travelling Persian merchants who were responsible for the curry’s popularity amongst royalty.
Massaman paste is actually created from Thai red curry paste but with sweeter spices added like cardamom seeds and ground cinnamon. As a result Massaman curry is much sweeter and milder than its other Thai relatives; Thai red curry and Thai green curry.
In India, it is not as common to add coconut milk to a curry dish. In the north, people often only add water or a small amount of cream and butter. To thicken the consistency, most Indians use blended tomatoes or onions. South India is more likely to include coconut milk in their curries for a hint of sweetness.

Gluten Free Massaman Curry & Rice
Indian and Thai curry dishes rarely have gluten — particularly if it’s an authentic restaurant — but of course I always ask to be sure.
Heat 1 tbsp vegetable oil in a pan until very hot, brown diced lamb and transfer to a casserole dish. In the same pan add the Bart Massaman Curry Paste, stir fry until aromatic and then add the ginger and onion – soften for 1-2 minutes before adding the coconut cream. Bring to the boil.

Made up of meat and vegetables in a spiced sauce, usually accompanied by rice, curry can potentially claim ‘good for you’ status. The vegetables contain lots of minerals and nutrients, and turmeric – the main spice in most curry powders – has anti-inflammatory effects.
If you are unable to get all of the ingredients to make your own curry paste, you can use curry powder instead. Generally, use 1 teaspoon of curry powder for every tablespoon of curry paste in any given recipe.
Massaman Curry is a bit of an outlier in Thai cuisine. It was born from Indian and Malay influences and as a result, the main flavours comes from spices typically associated with Indian curries. Spices such as: cumin, coriander, cloves, nutmeg, cinnamon and cardamom.
Thai green curry
Named after it’s vivid colour, Thai green curry contains an array of vegetables and coconut milk to cut through the spice.
However, there are some key distinctions: Panang (or penang) curry is richer and sweeter than most red curries, due to coconut cream (in place of coconut milk) and sometimes even peanuts, according to ChowHound. In Thailand, it’s traditionally served with beef, and is typically very spicy.
Out of all Thai curry varieties, massaman curry stands out as the mildest, sweetest, and the most unusual type. It is a combination of creamy coconut milk, meat, potatoes, and a curry paste made with roasted spices.
Stay aware of all those extra spices — the flavor profile is a bit different, so you may want to consider that when incorporating any other seasoning agents into your dish. For best results, you can do a direct swap, using a tablespoon of massaman curry paste in a dish that calls for a tablespoon of red curry paste.

The sweetest, and mildest, of all the curries, this Indian-influenced dish includes potatoes and gets its distinctive flavour from a pairing of tamarind with roasted and finely ground spices. It includes both coconut milk and coconut cream, making it very rich and creamy.
What’s in panang curry paste? Panang curry pastes vary somewhat from brand to brand, but they typically include dried chili peppers, galangal, ginger, lemongrass, kaffir lime zest, kaffir lime leaves, coriander root, coriander seeds, and cumin seeds.
Coconut milk and cream are mostly interchangeable in recipes such as curries and soups. If you prefer a richer flavour and texture, try coconut cream or vice versa. However, be careful when substituting coconut milk and cream in baked goods.
Coconut milk or Yogurt
First, it may thicken the sauce, and second, it gives a milder taste to it with loads of coconuty aroma. So if you find your curry to be a bit too spicy to your liking, a few spoonfuls of coconut milk would give it a milder taste as well as a thicker and a smoother texture.
While all Thai curry pastes typically share some ingredients, like garlic, ginger, chiles, and fish sauce, green curries contain green chiles and fresh herbs like cilantro and basil, giving it a distinct hue. Makrut lime leaves and/or peel are sometimes used for a fragrant, often spicy curry.

Pad Thai is usually gluten-free, but not always. Pad Thai traditionally uses rice noodles (which are gluten-free), but some restaurants use soy-sauce (which may contain wheat) and sometimes fish sauce is added to pad thai (and a few brands of fish sauce contain wheat).
What Does Massaman Curry Taste Like? Just like Panang curry, Massaman curry is also thick but it is milder than most Thai curry dishes. It is an aromatic curry with a tangy, luxurious taste that is harmonic, sweet and isn’t as spicy as other Thai curries.
Panang curry has peanuts in it, in either crushed form or peanut butter is added. And the curry itself is bit sweeter than normal Thai red curry. Ground peanut is the additional ingredient that gets added to Panang curry, which you will not find in Thai red curry.
