Add the chicken thighs to the slow cooker. Sprinkle over the ranch seasoning mix. Place the cream cheese on top of the chicken.
Cover and cook on LOW for 7 hours without opening the lid during the cooking time.
Shred the chicken, I do this right in the slow cooker with 2 forks. Stir the cooked cream cheese into the shredded chicken and also stir in the bacon. Spread out into an even layer. Sprinkle over the cheese. Cover for 10 more minutes to allow the cheddar cheese to melt.
Serve over rice and sprinkle over the green onions. Enjoy! Other great ways to serve is over a baked potato or on sandwich rolls.

Yes, chicken breast do work with this recipe if you prefer them.

Remove your chicken from your crock pot and place on top of a bed of angel hair pasta, if desired

Since I was changing things up on this recipe and had never tried it before, I definitely wanted my trusty ol’ Sir Hamilton (my Hamilton Beach Programmable Insulated Slow Cooker) to do the cooking for me. A new recipe can give you surprises sometimes, so I wanted my reliable crock pot for sure! You can use your favorite 5-6 quart slow cooker.
I served this over angel hair pasta with wonderful results. You could eat it without pasta or use your favorite pasta. Make it your own!

SLOW COOKER CRACK CHICKEN (CHEDDAR RANCH CHICKEN)
Ingredients
3poundsBoneless Skinless Chicken Breasts
2packetsdry ranch seasoning or try my Homemade Ranch Seasoning
28 ouncecream cheese
6slicesbaconcooked and crumbled
1cupcheddar cheese
chopped green onions for garnish
Instructions
In a slow cooker add the chicken to the bottom. Sprinkle with dry ranch seasoning. Top with cream cheese. Cover and cook on low for 6-8 hours or high for 4 hours long.
Shred the chicken with two forks. Top with bacon and sprinkle with cheese. Cover until melted. Serve on buns, over rice and garnish with green onions.
Tips for the Best Crack Chicken Slow Cooker
Chicken: Use skinless and boneless chicken for less fat and grease. You can use boneless skinless chicken thighs with the same success as chicken breasts.
Bacon: For the best taste and texture use real bacon crumbles not bacon bits which can be pretty artificial tasting.
Keep it from Drying! This is definitely a recipe you don’t want to over cook it. The best success is long and low.
Cream Cheese: Chunk the cream cheese and distribute evenly over the chicken for even melting.
Cheddar Cheese: Bacon and cheddar just go together but you can easily change it up, try jalapeno pepper jack for a kick, colby or even swiss.
Storing Cheddar Ranch Chicken: Keep this in an airtight container for up to 3-4 days and YES you can freeze it. Put it in a freezer safe airtight container and it will keep for up to 3 months.

3large (8 oz)Chicken Breasts,halved, boneless and skinless
Pour the broth in the crock and then sprinkle the chicken with the ranch dressing.
Cut the cream cheese into four pieces and place them on top of the chicken.
Sprinkle with the shredded cheese and place the lid on the crockpot.
Cook on High for 4 hours or Low for 6, or until the temperature of the chicken reaches 165°F. I use a digital meat thermometer.

What is the Best Cut of Chicken to Use?
This recipe calls for large boneless/skinless chicken breasts, but you can also use boneless/skinless chicken thighs.
Lightly grease slow cooker with nonstick cooking spray. Add two tablespoons water.
In a small bowl, mix olive oil and seasonings EXCEPT Ranch seasoning. Rub mixture all over chicken then place chicken in the bottom of your slow cooker along with any remaining mixture. Cook on high for 2-4 hours or on low for 6-7 hours or until chicken is tender enough to shred, being careful not to overcook.
Remove chicken to a cutting board, and let rest 5 minutes before shredding. Drain excess liquid in slow cooker. Return shredded chicken to slow cooker.
Top shredded chicken with cubed cream cheese and sprinkle with ranch seasoning. Cook on HIGH an additional 20 minutes then stir in cream cheese until chicken is evenly coated. Taste and add hot sauce to taste if desired.
Delicious as filling in tacos, taquitos, burritos, enchiladas, etc.

Cream Cheese Chicken only contains chicken, spices, and cream cheese, so it is a great choice for those on low-carb diets. If you are on a keto diet replace the ⅓ reduced fat cream cheese with regular.
