KETO SHREDDED CROCK POT TERIYAKI CHICKEN

Ingredients

  • ½ cup Keto teriyaki sauce low carb yum homemade recipe
  • ½ cup Chicken broth
  • 1 ½ – 2 pounds Boneless skinless chicken breasts or chicken thighs
  • ¼ cup Green onions
  • Sesame seeds for garnish

Instructions

  • Place the chicken breasts into the bottom of the Crockpot.
  • Mix together the teriyaki sauce and chicken broth.
  • Pour the mixture over the chicken breasts.
  • Place the lid on the Crockpot and cook on low for 6-8 hours.
  • Remove the chicken and shred it, mixing it with the remaining sauce in the Crockpot.
  • Garnish with green onions and sesame seeds before serving.

Notes

If you are not a big fan of chicken, you can always swap it out for pork or beef. I highly recoomend cooking a pork butt or shoulder in the slow cooker.

To make this recipe spicy, add a teaspoon or two of srircha or garlic chili paste.

Can I cook this chicken without a crock pot?

If you do not have a crock pot but still want to make this crock pot teriyaki chicken there are a few things you can do.

You can cook the chicken on the stovetop instead, or you can boil it. Either way will work, and you can shred it after it has cooked.

Can I use frozen chicken?

Yes! You can definitely use frozen chicken for this recipe. Just make sure that you use chicken breasts and thighs that are skinless and boneless.

You can either let them think out slightly beforehand or let them cook for 20 to 30 minutes extra. Just make sure to check them after the 6-hour mark just to be safe!

Can I cook this crock pot teriyaki chicken for less than six hours?

Generally, chicken can take as little as 4 hours to cook in the crock pot on the low setting. This can obviously fluctuate according to the slow cooker model and size of the chicken.

You probably could cook the chicken for less time than 6 hours, but I have never tried it. The chicken should be cooked for at least 4 hours I wouldn’t recommend trying to cook it any faster than that.

If you are in a hurry, you could try cooking it on a medium setting, but that could dry the chicken out as well as thicken the sauce too much.

What To Serve With Slow Cooker Teriyaki Chicken

This keto teriyaki chicken is full of flavor and goes well with a variety of side dishes!

Try serving it with Chinese cauliflower pork fried rice or an Asian-inspired zucchini salad.

If you don’t have time for an elaborate side dish, you could just serve it on top of plain cauliflower rice as well!

Keto Crockpot Chicken

Slow cooker recipes are such a life saver, aren’t they? This Keto Slow Cooker Zesty Ranch Chicken is one of the easiest recipes out there. No pan searing or chopping required! For this slow cooker meal we add chicken breast, butter, cream cheese, ranch seasoning and pepperoncini peppers, just pop the lid on and let it cook low and slow all day!

No fuss dinners are a must at my house, and this recipe definitely fits the bill. Earlier this week we had this Taco Spaghetti Squash Casserole, which made for perfect leftovers! If you’re looking for another quick meal, these Air Fryer Buffalo Wings make the rounds in our house at least once a month. I’ve also been doing a lot of sheet pan dinners lately (hello, no cleanup!), and one of my favorite recipes is for Easy Sheet Pan Fajitas, which are a delicious way to stick to my keto diet!

Ingredients for Keto Ranch Chicken

  • Chicken breast- fresh or frozen
  • Butter
  • Cream cheese- I used full fat
  • Ranch seasoning packet
  • Pepperoncini peppers- optional, but they add a great flavor!

Instructions

  1. Place all ingredients in a small slow cooker (I use a 2 quart and it fits perfectly)
  2. Cook on low for 8 hours.
  3. Stir and shred the chicken and peppers when ready to serve.

How should I store and reheat keto ranch chicken?

Store any leftovers in an air-tight container and keep in the fridge up to 5 days or in the freezer up to four months. When ready to reheat, microwave in 30-second intervals, stirring until heated through completely. If you’re using this in a casserole or skillet recipe, you might not need to reheat separately. Just throw it into any recipe (thawed) that calls for cooked or shredded chicken!

LOW CARB SAUCY CROCK POT CHICKEN

INGREDIENTS NEEDED

  • 2 lbs chicken tenders
  • 1 stick butter, divided
  • 1/2 cup butter, divided
  • 1 tablespoon garlic powder
  • 2 teaspoons garlic salt
  • 1 teaspoon onion powder
  • 1/2 teaspoon pepper
  • 1 teaspoon parsley flakes
  • 1/4 teaspoon ground red pepper
  • 1 teaspoon dried cilantro leaves
  • 1.5 cups shredded parmesan cheese
  • 1 cup heavy whipping cream

EQUIPMENT NEEDED

  • Butter knife
  • Cutting board
  • Measuring spoons
  • Measuring cups
  • Medium bowl and mixer or stand mixer
  • 4 quart slow cooker

TIME NEEDED

  • Prep Time: 5 minutes
  • Cooking Time: 4 hours on low or 2 hours on high, stirring halfway through

Instructions

  • Melt 2 tablespoons of butter in a skillet over medium/high heat.
  • Brown all of your chicken tenders, about 3 minutes on each side.
  • Place your browned chicken tenders in a 4 quart slow cooker, pouring the remaining butter/cooking juices over top.
  • Using a mixer, combine your remaining ingredients and spoon over the top of your chicken
  • Cover and cook on low for 4 hours or high for 2 hours, stirring halfway through

Slow Cooker Cheesy Chicken Recipe with Bacon

Ingredients:

  • Boneless skinless chicken breasts – I prefer skinless chicken breasts; you could use boneless chicken thighs instead.
  • Butter – Butter always adds incredible flavor and needed fat for this recipe.
  • Poultry seasoning, Rosemary, Thyme, and Garlic – Spices make everything better and add great flavor. If you do not have fresh garlic, you can also use a tsp of garlic powder.
  • Chicken broth – Chicken broth adds more flavor than water when slow-cooking chicken.
  • Cooked bacon – Crispy bacon makes everything better.
  • Heavy whipping cream & Cream Cheese – Adds flavor and fat and helps thicken the sauce.
  • Cheese – Cheese is an incredible addition to this dish for an ooey-gooey cheesy chicken dish.

Instructions

    • Season the chicken with salt and pepper, then add to the slow cooker.
    • Add butter, poultry seasoning, rosemarry, thyme, garlic cloves, and chicken broth to the crock pot with the chicken.
    • Cook some bacon either in a skillet or in the oven and then crumble over the top of the chicke,.
    • Cook on low for 6 hours or high for 3 to 3 1/2.
    • Add heavy whipping cream to slow cooker.
    • Dollop cream cheese on top and stir to combine all ingredients.
  • Using 2 forks, shred chicken in slow cooker.
  • Add 1 3/4 cups of cheddar cheese (or more if you’d like) then crumble 3 pieces of cooked bacon on top.
  • Place the top back on the slow cooker and allow cheese to melt.
  • Enjoy!
