Ingredients
- 100g/4oz madeira cake
- 100g Oreo cookie
- 100g bar milk chocolate, melted
- 200g bar white chocolate, melted
- few Smarties and icing pens, to decorate
You will also need
- 10 wooden skewers
- ½ small pumpkin or butternut squash , deseeded, to stand pops in
Method
Break the Madeira cake and cookies into the bowl of a food processor, pour in the melted milk chocolate and whizz to combine.
Tip the mixture into a bowl, then use your hands to roll into about 10 walnut-sized balls. Chill for 2 hrs until really firm.
Push a skewer into each ball, then carefully spoon the white chocolate over the cake balls to completely cover. Stand the cake pops in the pumpkin, then press a Smartie onto the surface while wet. Chill again until the chocolate has set. Before serving, using the icing pens, add a pupil to each Smartie and wiggly red veins to the eyeballs.
Holloween Jalapeño Popper Mummies
ingredients
- 10 Jalapeño Peppers
- 8 oz Softened Cream Cheese
- 8 oz Pepper Jack Cheese
- 1/2 teaspoon minced garlic
- Pinch Salt
- Pinch Pepper
- 1 Scallion
- Candy Eyeballs
- Pillsbury Crescent Rolls
Instructions
- Preheat your over to 400° in line a baking sheet with parchment paper.
- Wash then Slice your jalapeño peppers in half lengthwise and scoop out the inside.
- In a large mixing bowl, use a cheese grater to shred your block of pepper jack cheese.
- Chop a scallion in tiny pieces.
- Mix in your cream cheese, scallion pieces, garlic, pepper and salt to your shredded cheese.
- Fill your jalapeño peppers with your cheese mixture.
- Now unroll your crescent rolls into rectangles (leave two triangles together and pinch the middle together).
- Use a pizza cutter to cut each crescent rectangle lengthwise into four even pieces.
- Wrap one or two pieces around each pepper, leaving a small opening for the eyes.
- Bake for 10-12 minutes.
- Right when you take your mummies out of the oven, add two candy eyes in each top opening
Pumpkin sushi rice balls

Ingredients
- 300g sushi rice
- 9cm piece cucumber, cut into 12 cubes
- 100g smoked salmon
- 3 coriander stalks, cut into 12 pieces
- 1 nori seaweed sheet
- 50ml low-salt soy sauce, for dipping
Method
- Cook the rice to pack instructions, then set aside until cool enough to handle. Wet your hands with water or a little oil so the rice doesn’t stick. Put about 1 tbsp rice in the palm of your hand and top with a cucumber cube. Add another 1 tbsp rice on top, then roll the rice around the cucumber until it’s completely covered and you have a solid rice ball. Repeat to make 12 balls.
- Using a round cookie cutter, cut the salmon into 12 x 5cm-wide circles and use to top each rice ball. Stick a coriander stalk into the rice to resemble a pumpkin stem. Cut triangle eyes and mouth shapes out of the seaweed and stick on top of the salmon for faces. Serve immediately with the soy sauce for dipping.

- Put the flour on a medium plate. Heat the oil in a large nonstick skillet over medium-high heat. Dredge the chicken in the flour to fully coat, shaking off any excess. Add the chicken to the skillet and fry until fully cooked and golden brown, about 4 minutes per side. Transfer to a platter and tent with foil to keep warm.
- Add 1/2 cup of the broth, the sun-dried tomatoes and rosemary to any remaining drippings in the skillet and cook, stirring frequently, for 1 minute to plump the tomatoes. Add the mushrooms, 1/4 teaspoon salt and 1/2 teaspoon pepper and cook until the mushrooms are soft, about 5 minutes. Add the marsala and bring to a boil. Add the remaining 1/4 cup broth and the butter and simmer until the butter is fully melted, about 30 seconds.
- Spoon the mushroom mixture and sauce over the chicken, sprinkle with the parsley and serve.
