My cauliflower pizza makes 3 nutrition-packed pizza’s from only 1/4 head of cauliflower!
And the best part, you can FREEZE these just like the Costco Cauliflower Pizzas! So if you quadruple the recipe to use up a whole head of cauliflower, you’ll make 12 freezer-friendly pizzas for many pizza dinners to come! Not to mention how delicious these pizzas are, considering they are “healthy”.
However, before you get working on the dough, make these ROASTED VEGETABLES to make your pizza taste just like Costco’s Cauliflower Roasted Vegetable Pizza! It is phenomenal how close it is to the real thing!
Not quite low-carb, as much as I wanted to go completely gluten-free the cauliflower pizza crusts weren’t turning out without the addition of flour. As of a result, all brown rice flour resulted in a grainy dough and the crust ended up cracking. After much trial, I came to the conclusion that it’s needing in order to produce a well-textured pizza crust.
Now maybe that’s not the healthiest option but at least I’m not using cellulose powder, calcium chloride, tapioca starch, or xanthan gum like some of the ingredients found off of the Costco Cauliflower pizza.
So, flour it was but, if you are on a strict diet perhaps milling oatmeal or other milling light grain can be substituting for the all-purpose flour. Surprisingly this actually didn’t taste that bad! It actually resembled regular pizza and didn’t have a strong cauliflower flavor. The crust isn’t very thick and doesn’t get as crispy as regular pizza crust and it is a little bland tasting (not completely cardboard tasting though). I’m pretty sure the toppings and sauce mask any cauliflower flavor. I also noticed that the crust has cheese in the ingredients list, so it’s not dairy free which gives the crust a mild cheesy flavor that I think also hides the cauliflower. Overall this was pretty good and I’d be happy to have it again.
The kit comes with two cauliflower pizza crusts, two tomato sauces and a freezer bag if you want to open the kit and not use one crust. You can choose your own toppings and create your own pizza to pop in the oven at home which I love. The best before date is about 3 months from the date we purchasing the kit.
1/4 of the crust is 130 calories, three grams of fat, 23 grams of carbohydrates, one gram of fibre, two grams of sugar and 370 mg of sodium. The ingredients list is posting in the photo above. I’ll definitely use up my second cauliflower pizza crust.
