Strawberry

The garden strawberry (or simply strawberry; Fragaria × ananassa)[1] is a widely grown hybrid species of the genus Fragaria, collectively known as the strawberries, which are cultivated worldwide for their fruit. The fruit is widely appreciated for its characteristic aroma, bright red color, juicy texture, and sweetness. It is consumed in large quantities, either fresh or in such prepared foods as jam, juice, pies, ice cream, milkshakes, and chocolates. Artificial strawberry flavorings and aromas are also widely used in products such as candy, soap, lip gloss, perfume, and many others.

6 ounces dark-green candy melting wafers

1 to 2 teaspoons coconut oil or vegetable shortening, if needed

1/2 cup dark-green sanding sugar, plus more as needed

12 large strawberries with green tops, rinsed and dried well

24 small candy eyeballs

1 ounce chocolate chips, optional

Instructions

  1. First, line a sheet pan with waxed or parchment paper and place it in the freezer to chill. Insert a skewer into the stem end of each strawberry.
  1. Place the chocolate and candy melts into separate glass or heat proof bowls.
  2. Put about 2 inches of water into two saucepans and bring to a simmer over medium heat. Turn off the heat and set the bowls of chocolate over the water to melt. Stir chocolate until smooth.
  3. Remove the sheet pan from the freezer.
  4. Using the skewer as a handle, dip the fruit into the chocolate. Lift and turn, allowing excess chocolate to drip back into the bowl. Place dipped berries onto the chilled lined sheet pan.
  5. Repeat with remaining strawberries
  1. How do you keep chocolate covered strawberries from getting mushy?
  2. Storing them in the fridge promotes moisture, which can lead to these strawberries getting mushy. Instead, store your strawberries at room temperature if you’ll be eating them within a day. After a day has passed, if you want to keep them fresh an additional day, move them to the fridge
  3. What food coloring is best for chocolate covered strawberries?
  4. The best food coloring for white chocolate candy melts is oil-based like these Wilton candy colors. You’ll notice in the image above that I’ve used gel food colors in this recipe too, and they worked alright. But the oil-based colors work best!

NOTES

Halloween Chocolate Covered Strawberries Ideas:

  • Vampire: Dip your strawberry in pale purple white chocolate and add candy eyes. Use a food coloring marker or writing icing to add a mouth with fangs.
  • Jack-o’-Lantern: Dip your strawberry into orange candy melts and set on parchment paper to set. Add lines of additional orange candy to create a pumpkin texture, and use black icing to create the jack-o’-lantern face!
  • Frankenstein:Dip in green colored candy melts, add candy eyes, and use black icing to add the rest of the face, including dark hair along brow.
  • Ghost: cut off the top of your strawberry and use a fork or toothpick to dip it in white chocolate with the cut side down. Place on parchment paper to set, cut side down, and use black icingto add ghostly eyes and mouth!

Making The Spiderwebs

I use the piping bag to make the spiderwebs as well, but if you find you have better control with a toothpick, that’s a great option, too!

Working with the dark chocolate covered strawberries, start by drawing an upsidedown “L” with 2 lines splitting the middle as pictured below:

Making the Skeletons

The remaining white chocolate strawberries will be used to make a skeleton design. Keep the surface smooth, and draw on the eyes, nose, and face with a toothpick dipped in dark chocolate.

The eyes are simple ovals, the nose an upsidedown V, and the mouth a crooked smile with vertical lines running through.

Pro Tips

  • If you don’t have a piping bag, you can easily use a Ziploc bag. Just cut about 1 mm off of one of the corners.

  • Once dipped in the melted chocolate, each strawberry should take around 10-15 minutes to set.The spider berries do require an additional 5-7 minutes to set as a result of adding the black spider web piping, totaling an average of 18 minutes for these not-so-spooky treats.Make sure that you place your parchment paper-lined tray with chocolate-dipped strawberries in a cool, dry area of your kitchen while they set.

HALLOWEEN CHOCOLATE COVERED STRAWBERRIES

For these strawberries, I did solid and line sprinkles, mummies, blood drips, jack-o-lanterns and ghosts.  I personally think the mummies are the cutest the easiest to make and the ghost and pumpkin faces were the most precise and took some practice. I recommend practicing on a piece of parchment paper or other flat surface until you’ve got the hang of it and have some faces you like, then move on to decorating the actual strawberries.   It helps to use very warm black chocolate and then use a scribe or toothpick to move it exactly where you want. This helps create sharp edges and fine detail. If you’ve ever decorated sugar cookies with royal icing, this is a common technique

NOTES

These are best the day you make them, but you can keep them in the fridge for one to two days. They can start to leak strawberry juice, but they still look and taste good

Should you cover chocolate covered strawberries?

If you’re eating them within a day, you can store them loosely covered with plastic wrap. If you’ll be storing them for up to two days (place in the fridge on that second day), place them in an airtight container.
